Ingredients

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup light brown sugar packed
  • 1/3 cup molasses
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • Holiday sprinkles

Instructions

To Make The Cookies

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, allspice, and salt.

  • In a large bowl, cream the butter, light brown sugar, and molasses using a hand mixer or stand mixer fitted with the paddle attachment. Continue until the mixture is smooth and creamy.

  • Add the egg and vanilla extract and mix until the ingredients are fully combined.

  • Gradually add the dry ingredients to the wet ingredients.
  • Stir until a soft cookie dough forms.
  • Scoop the dough into 1-inch cookie dough balls
  • Roll the dough balls with your hands and place them onto the prepared baking sheet. Lightly press to flatten the tops.
  • Bake for 7-10 minutes or until the edges are set and golden.
  • Remove from the oven and allow cookies to cool completely on a wire rack.

To Decorate The Cookies

  • Melt the white chocolate chips in a microwave-safe bowl in 10-second intervals, stirring frequently.

  • Dip one side of each cooled cookie into the melted white chocolate and place it back on the wire rack.
  • Sprinkle each dipped cookie with holiday sprinkles while the chocolate is still warm, then let them set at room temperature.

Notes

It's important to melt your white chocolate in short increments, stirring frequently. If you overheat it, the chocolate could seize up. I also recommend using a higher end chocolate, such as Ghirardelli, for best results.
