Start by removing the cooled Funfetti cake from the baking pan and crumbling into the large bowl of a stand mixer. Add the frosting and mix on high until well combined.
1 9x13 Funfetti cake , 2 tablespoons vanilla frosting
Knead together with your hands, making a large ball. It should be well combined and packed tightly.
Using your cookie dough scoop, remove even amounts of dough and roll each into a well packed ball. Place on a parchment lined baking sheet.
Place in the freezer for one hour. This is important because it makes them easier to dip.
Remove your cake balls from the freezer, dip the end of your cake pop stick in the melted green chocolate and push down the center of your cake ball. Let chocolate harden and set.
4 cups green candy melts
Dip each cake pop in the light green chocolate. Set down gently on your parchment paper. Once candy coating has set, dip once more. Two coats helps to prevent the chocolate from cracking.
Once your green chocolate is set, dip each cake pop, about halfway up, in your melted butterscotch.
2 cup butterscotch chips
Immediately cover in crushed nuts and set on parchment paper to harden. Serve and enjoy.
