How to Make Caramel Apple Cake Pops

Step 1. Start by removing the cooled Funfetti cake from the baking pan and crumbling into the large bowl of a stand mixer. Add the frosting and mix on high until well combined.

Step 2. Knead together with your hands, making a large ball. It should be well combined and packed tightly.

Step 3. Using your cookie dough scoop, remove even amounts of dough and roll each into a well packed ball. Place on a parchment lined baking sheet.

Step 4. Place in the freezer for one hour. This is important because it makes them easier to dip.

Step 5. Remove your cake balls from the freezer, dip the end of your cake pop stick in the melted green chocolate and push down the center of your cake ball. Let chocolate harden and set.

Step 6. Dip each cake pop in the light green chocolate. Set down gently on your . Once candy coating has set, repeat once more. Two coats helps to prevent the chocolate from cracking.

Step 7. Once your green chocolate is set, dip each pop, about halfway up, in your melted butterscotch.

Step 8. Immediately cover in crushed nuts and set on parchment paper to harden. Serve and enjoy.

Can I freeze them?

Yes, you can freeze these for later! After they’ve fully set, place them on their side in an airtight container, with parchment paper between the layers. Thaw in the refrigerator before serving.

What do I do if my chocolate is too thick (or too thin)?

If the chocolate is too thick, try adding about a tablespoon of vegetable oil or shortening to thin it out. I really like to use Wilton EZ Thin Dipping Aid. If it’s too thin, let it cool slightly before dipping again.

Can I use caramel instead of butterscotch chips?

I don’t recommended this. Because you have to melt the caramel at such high temps, it will melt the chocolate coating when you dip it into the caramel.
