Cheesy Taco Tortellini

This Cheesy Taco Tortellini is a mouthwatering fiesta of flavors and the perfect way to add a fun, tasty twist to Taco Tuesday.

Ingredients

  • 2 1/2 cups Cheese tortellini
  • 1 lb Lean ground beef
  • 1 package Taco seasoning
  • 29 ounces fire-roasted diced tomatoes w/ garlic (2) 14.5 ounce cans
  • 1/2 cup Mexican cheese
  • Splash of lime juice
  • Fresh chopped parsley or cilantro for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the tortellini to the boiling water and cook it until it's al dente or according to the package instructions. Drain and set aside.
    2 1/2 cups Cheese tortellini
  • Heat a large skillet over medium-high heat. Add ground beef, making sure to break up large pieces as it cooks.
    1 lb Lean ground beef
  • Once the meat is fully cooked, add taco seasoning and tomatoes (including juices). Mix well and bring to a simmer.
    1 package Taco seasoning, 29 ounces fire-roasted diced tomatoes w/ garlic
  • Add the tortellini to the skillet and stir gently.
    2 1/2 cups Cheese tortellini
  • Sprinkle with shredded cheese and a squeeze of lime juice. Place the lid over the pan and simmer until the cheese has melted.
    1/2 cup Mexican cheese, Splash of lime juice
  • Serve your taco tortellini pasta garnished with fresh parsley. Enjoy!

Notes

You an also use freshly diced tomatoes in place of canned.
