How To Make Easy Taco Tortellini

Step 1. Bring a large pot of salted water to a boil. Add the tortellini to the boiling water and cook it until it’s al dente or according to the package instructions. Drain and set aside.

Step 2. Heat a large skillet over medium-high heat. Add ground beef, making sure to break up large pieces as it cooks. I like using this meat chopper to separate the pieces.

Step 3. Once it’s fully cooked, add taco seasoning and tomatoes (including juices). Mix well and bring to a simmer.

Step 4. Add the tortellini to the skillet and stir gently.

Step 5. Sprinkle with shredded cheese and a squeeze of lime juice. Place the lid over the pan and simmer until the cheese has melted.

Storage Instructions

  • Refrigerator: Let the leftovers cool before transferring them to an airtight container. Store in the fridge for up to 3 days.
  • Freezer: You can also freeze any leftovers. Just make sure you use a freezer-safe container and label with the date you make it. Store it in the freezer for up to a couple of months.
  • Reheating: Heat leftovers in the microwave or on the stove just until warm. Pasta tends to soak up the liquids the longer it’s stored. If the tortellini mixture seems too thick, you can add a little beef broth or even some tomato sauce to help loosen it up.

  • Added protein: Feel free to swap the ground beef with ground turkey, ground chicken, or ground pork.
  • Pasta: This recipe calls for cheese tortellini but you can use another flavor or even a totally different type of pasta. Cavatappi, fusilli, or elbow noodles are popular choices.
