Ingredients

  • 8 ounces whipped cream cheese
  • 1 tablespoon pickle juice
  • Salt and pepper to taste
  • 3 large flour tortillas about 10-inch size
  • 1 cup chopped dill pickles
  • 1/2 cup finely diced red bell pepper
  • 6 slices deli ham

Instructions

  • Add the whipped cream cheese to a mixing bowl, then add the pickle juice and stir until smooth. Season with salt and pepper to taste, if you prefer.

  • Place the flour tortillas on a flat surface and spread the cream cheese mixture evenly over each one.

  • Sprinkle the chopped dill pickles and diced red bell pepper evenly over the top.

  • Place two slices of deli ham in a single layer across each tortilla.

  • Roll each tortilla up tightly into a log, making sure the filling stays inside. Wrap the rolled tortillas in plastic wrap and refrigerate for at least 30 minutes, or until firm.
  •  Once chilled, unwrap and slice into bite-sized pinwheels. Serve cold and enjoy!

Notes

  • Let the cream cheese sit at room temperature for a few minutes before mixing. This will help it blend more easily and with a smoother texture.
  • Use paper towels to pat the chopped pickles and the ham slices dry. This keeps the filling from getting watery.
  • Spread the filling all the way to the edges so the roll stays sealed.
  • Slice with a serrated knife using gentle pressure for clean cuts without squishing.
  • Lightly warm the tortillas in the microwave for 10 seconds to keep them from cracking when you roll.
