Dill Pickle and Ham Roll Ups

These Dill Pickle Pinwheels are a classic party appetizer that’s been around forever, and for good reason. Chopped pickles, bell pepper, and splash of pickle juice give the filling a tangy flavor that’s really hard to resist. The whipped cream cheese brings it all together with a light, creamy texture makes it super easy to spread (and even easier to eat).

Rolled up in tortillas and chilled until firm, they slice into the perfect little bite-sized pinwheels – and honestly, they’re just fun to eat. I’ve packed them in lunchboxes, brought them along for pool days, and whipped up a batch when we needed last minute snacks. Trust me, they’re the kind of appetizer you make once and suddenly everyone’s asking for them at every get-together.

Why We Love This Recipe

  • Easy: This recipe is super easy to make with just a few simple ingredients. Just mix, roll, chill, slice and they’re ready to serve.
  • Make-ahead friendly: Chill the rollups in advance and slice when you’re ready. They’re great for parties, lunch prep, or snacks on the go.
  • Delicious flavors: The mix of dill pickles, sweet pepper, and tangy pickle juice gives each pinwheel a delicious, savory punch of flavor.

Ingredients

Ingredients for a tortilla wrap are laid out on a white surface: tortillas, ham, whipped cream cheese, red bell pepper, dill pickles, pickle juice, salt, and pepper.
  • 10-inch tortillas: I used flour tortillas because they’re soft, flexible, and easy to roll.
  • Whipped cream cheese: Light, fluffy, and easy to mix with the other ingredients.
  • Pickle juice: Just a splash adds a little tang that brightens everything up.
  • Chopped dill pickles: Crunchy, salty, and the star of the show.
  • Red bell pepper: Adds sweetness and crunch to the filling.
  • Deli ham: Sliced thin so it layers easily without tearing the tortilla.
  • Salt and pepper: Optional, but a pinch can balance out the flavors.

How To Make Easy Pickle Roll Ups

Step 1. Add the whipped cream cheese to a mixing bowl, then add the pickle juice and stir until smooth. Season with salt and pepper to taste, if you prefer.

Step 2. Place the flour tortillas on a flat surface and spread the cream cheese mixture evenly over each one.

Step 3. Sprinkle the dill pickles and red bell pepper over the top.

Step 4. Place two slices of deli ham across each tortilla, in a single layer.

Step 5. Roll each tortilla up tightly into a log, making sure the filling stays inside. Wrap the rolled tortillas in plastic wrap and refrigerate for at least 30 minutes, or until firm.

Step 6. Once chilled, unwrap and slice into bite-sized pinwheels. Serve cold and enjoy.

Storage Instructions

Store leftover pinwheels in an airtight container or wrapped in plastic wrap in the refrigerator for up to 3 days. This prevents them from drying out. I don’t recommend freezing them.

Tips And Tricks

Here are a few easy tips that’ll help your pinwheels turn out perfect every time.

  • Let the whipped cream cheese sit at room temperature for a few minutes before mixing. This will help it blend more easily and with a smoother texture.
  • Use paper towels to pat the chopped pickles and the ham slices dry. This keeps the filling from getting watery.
  • Spread the filling all the way to the edges so the roll stays sealed.
  • Slice with a serrated knife using gentle pressure for clean cuts without squishing.
  • Lightly warm the tortillas in the microwave for 10 seconds to keep them from cracking when you roll.

Variations And Add-Ins

This such a versatile recipe and I love being able to switch it up a little! Here are some fun ideas you can try.

  • Ranch: Add a sprinkle of ranch seasoning to the cream cheese for extra flavor.
  • Pickles: Use butter pickles if you like a sweeter flavor.
  • Cheese: Stir in a bit of shredded cheddar for extra flavor and texture.
  • Seasonings: Add a teaspoon of garlic powder or onion powder to the mix.
  • Deli meat: You can use turkey or chicken instead of ham if you prefer.
  • Herbs: Add a handful of chopped green onions or fresh dill for extra punch.
  • Tortillas: Swap plain tortillas for flavored ones like spinach or tomato basil.

FAQs

Can I make these the night before?

Yes, just wrap each roll tightly in plastic wrap and store in the fridge overnight. Slice right before serving.

Do I have to use whipped cream cheese?

No, but it makes a big difference. If using regular cream cheese, let it soften and beat it until fluffy for easier spreading.

Can these be frozen?

The ham and pickles release juice which frozen and thawed. This can cause the filling to become runny, which makes the tortilla soggy.
