This easy guacamole is made with creamy avocados, lime, cilantro, onion, and a touch of jalapeño. It's the perfect party food for dipping, or a delicious topping for your favorite dishes.
Slice the avocados in half, remove the pit, and scoop flesh into a mixing bowl with a large spoon. Mash the avocado with a large fork. I leave mine a little chunky.
8 ripe avocados
Add the diced onion, diced tomatoes, chopped cilantro, and minced jalapeño pepper, minced garlic and salt to the bowl. Gently mix ingredients together with spoon.
1 small red onion, 4 tomatoes, 3/4 cup fresh cilantro, 1 jalapeno pepper, 3 garlic cloves, juice of 2 limes, 1/2 teaspoon coarse sea salt
Serve immediately in smaller bowls or family style and scoop it with tortilla chips, or spoon it over grilled chicken or fish.
tortilla chips - optional
Notes
Remove tomato seeds for better texture: Scooping out the seeds keeps the guacamole from becoming watery and helps the mixture stay thick and creamy.
Tame the heat: Jalapenos can vary in spice, so remove the seeds and membranes for a milder guacamole or leave some in for extra heat.
Serve it fresh for the best flavor: Guacamole tastes best right after it is made while the avocado is bright and creamy.
