Ingredients

  • 8 ounces brie cheese rind removed
  • 4 tablespoons cream cheese at room temperature
  • 2 teaspoons honey or more to taste
  • pinch salt

Optional Toppings

  • Extra honey or hot honey
  • Chopped toasted walnuts or pecans
  • Roasted garlic
  • Fresh thyme or rosemary
  • Fig jam or fruit preserves

Instructions

  • Remove the brie rind by slicing off the top, bottom, and sides with a sharp knife. Cut into cubes.
    8 ounces brie cheese
  • Place the brie cubes and cream cheese in a food processor or stand mixer. Whip until smooth and airy, scraping down the sides as needed.

  • Add honey and a pinch of salt. Whip again until fully combined.

  • Taste and adjust sweetness or salt as needed.
  • Chill for 10-15 minutes if you want a firmer spread, or serve right away for a softer version.
  • Transfer to a shallow bowl. Add your favorite toppings and serve with crackers, crostini, or sliced fruit.

Notes

  • Slice the rind from the brie while it’s cold. It’s much easier than when the cheese is soft.
  • Let the brie come to room temperature before whipping for the smoothest texture.
  • Use a food processor or a mixer with a paddle attachment for the lightest, fluffiest dip.
  • Scrape down the sides a few times to make sure the brie cheese blends evenly.
  • Always add toppings just before serving so they stay fresh.
