Equipment

Ingredients

  • 1 box Vanilla Cake Mix
  • 3 eggs or amount listed on cake mix box
  • 1/2 cup vegetable oil or amount listed on cake mix box
  • 1 cup water or amount listed on cake mix box
  • 1 teaspoon orange extract
  • ¼ cup vanilla frosting
  • 4 packets Pop Rocks
  • 1 cup white chocolate melting chips or candy melts

Instructions

  • Preheat the oven to 350° and spray cake pan with non-stick cooking spray.
  • Prepare the cake batter according to the instructions on the box.
1 box Vanilla Cake Mix, 3 eggs, 1/2 cup vegetable oil, 1 cup water
  • Add a teaspoon of orange extract and mix thoroughly.
    1 teaspoon orange extract
  • Pour into a cake pan and bake according to the directions on the box. When finished, remove from the oven and let cool for 15 minutes.
  • Crumble the cake in a mixing bowl and let cool for another 20 minutes.
  • Add the frosting and mix well.
    ¼ cup vanilla frosting
  • Form the mixture into a large ball, then use a 1" cookie scoop to make smaller balls.
  • Press your finger into each cake ball to make a small hole, then pour about ½ teaspoon of pop rocks candy into each.
    4 packets Pop Rocks
  • Close the hole by pushing the dough ball back together and rolling back into ball.
  • Heat the white melting chips in the microwave at 30 second intervals until fully melted.
1 cup white chocolate melting chips
  • Using a spoon, fork or toothpick, dip each of the balls into the melted chocolate, coating all sides. Drain any excess and place on a parchment paper or wax paper lined baking sheet.
  • Sprinkle extra pop rocks on top of each while the chocolate is still wet.
  • Let chocolate set (you can put them in the refrigerator to speed up the process) and enjoy!

Notes

Typical box cake mixes require 3 eggs, 1/2 cup vegetable oil and a cup of water. If your box mix asks for different amounts of these ingredients, follow the directions on the box.
