  • Preheat oven to 375 degrees.
  • In a large mixing bowl, beat the butter, brown sugar and white sugar together with an electric mixer on medium speed for about two minutes, or until light and airy.

  • Add the egg and vanilla extract and beat until incorporated.

  • In a separate bowl, stir together the flour, salt, and baking powder.

  • Add the dry ingredients to the butter mixture and beat until just combined.
  • Add the chopped pistachios and white chocolate chips to the cookie batter and stir until combined.

  • Using a cookie scoop, portion the cookies onto a cookie sheet lined with parchment paper or sprayed with non-stick cooking spray.
  • Bake for about 12 minutes, or until cookies are just beginning to turn golden brown at the bottom edges. Allow to cool on the cookie sheets for five minutes before transferring to a wire rack.

Notes

If you want the green color that comes with using the instant pistachio pudding mix, you can always add a few drops of food coloring. This also makes them the perfect treat for St. Patrick’s Day.
