Heat oven to 350 F. Lightly grease the bottom of a baking pan and line it with parchment paper.
In a large bowl, melt the butter in the microwave. Allow it to cool for a few minutes.
½ cup unsalted butter
Whisk the sugar and cocoa powder into the cooled melted butter.
½ cup unsweetened cocoa powder, ¾ cup granulated sugar
Mix in the eggs, salt, and vanilla extract. Mix just until the eggs have been fully incorporated into the batter.
2 eggs, 1 1/2 teaspoons vanilla extract, ¾ teaspoon salt
Gradually add in the flour and baking powder, stirring until all ingredients are well combined.
1 ¼ cups all purpose flour, ¼ teaspoon baking powder
Fold in half of the Reese’s peanut butter cup minis and half of the chips. Set the rest aside for topping.
1 cup Reese’s peanut butter cup minis, ¾ cup Reese’s peanut butter chips
Using a rubber spatula, spread the brownie batter in an even layer in the prepared pan.
Sprinkle the remaining Reese’s peanut butter cups and chips over the top.
1 cup Reese’s peanut butter cup minis, ¾ cup Reese’s peanut butter chips
Bake at 350 F for 23-27 minutes, or until a toothpick inserted in the center of the brownies comes out clean. If you prefer extra fudgy brownies, cook on the lower end of the cooking time.
Leave the brownies in the pan and let them cool completely on a wire rack before cutting into squares and serving. Enjoy!
