Reese's Peanut Butter Cup Brownies

  • ½ cup unsalted butter 1 stick, melted & cooled
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • ¾ teaspoon salt
  • 1 ¼ cups all purpose flour
  • ¼ teaspoon baking powder
  • 1 cup Reese’s peanut butter cup minis roughly chopped, divided
  • ¾ cup Reese’s peanut butter chips divided

Instructions

  • Heat oven to 350 F. Lightly grease the bottom of a baking pan and line it with parchment paper.
  • In a large bowl, melt the butter in the microwave. Allow it to cool for a few minutes.

  • Whisk the sugar and cocoa powder into the cooled melted butter.
    ½ cup unsweetened cocoa powder, ¾ cup granulated sugar
  • Mix in the eggs, salt, and vanilla extract. Mix just until the eggs have been fully incorporated into the batter.

  • Gradually add in the flour and baking powder, stirring until all ingredients are well combined.

  • Fold in half of the Reese’s peanut butter cup minis and half of the chips. Set the rest aside for topping.

  • Using a rubber spatula, spread the brownie batter in an even layer in the prepared pan.
  • Sprinkle the remaining Reese’s peanut butter cups and chips over the top.

  • Bake at 350 F for 23-27 minutes, or until a toothpick inserted in the center of the brownies comes out clean. If you prefer extra fudgy brownies, cook on the lower end of the cooking time.
  • Leave the brownies in the pan and let them cool completely on a wire rack before cutting into squares and serving. Enjoy!

Notes

  • Be careful not to overmix the batter, otherwise it may result in a tougher consistency.
  • Do not overcook the brownies. For fudgy brownies, a toothpick inserted in the middle will come out with just a little batter and a few crumbs clinging to it. For more cake-like brownies, wait until the brownie batter starts to pull away from the sides of the pan.
