Roasted Garlic Aioli

This easy roasted garlic aioli is not only the perfect way to add a tasty kick to burgers and sandwiches but it's also a fantastic dipping sauce for veggies and fries.

Ingredients

  • 3 whole garlic bulbs
  • 2 tablespoons avocado oil
  • Salt and pepper to taste
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 tablespoon spicy brown mustard

Instructions

  • Preheat oven to 375 F. Leaving the skins on, cut off the top of the bulbs of garlic to expose the cloves. Place them on a sheet of aluminum foil.

  • Drizzle the tops of each open bulb with avocado oil. Season with salt and pepper, to taste. Wrap the foil around the garlic to enclose the bulbs, then place on a baking sheet.

  • Transfer the baking sheet to the oven. Roast the garlic for about 40-50 minutes, or until the cloves are tender.
  • Remove from the skins and transfer the garlic cloves to a small bowl.
  • Allow to cool at room temperature for about 10 minutes, then mash the caramelized garlic with a fork.
  • Add the mayonnaise, lemon juice, and spicy brown mustard, whisking together until evenly combined.

  • Taste and adjust with a little more salt if

Notes

For a smoother consistency, add the ingredients to a food processor or blender and blend until you've got the creaminess you like.
