Easy Roasted Garlic Aioli

How to Make Roasted Garlic Aioli

Step 1. Preheat oven to 375 F. Leaving the skins on, cut off the top of the bulbs of garlic to expose the cloves. Place them on a sheet of aluminum foil.

Step 2. Drizzle the tops of each open bulb with avocado oil. Season with salt and pepper, to taste. Wrap the foil around the garlic to enclose the bulbs, then place on a baking sheet.

Step 3. Transfer the baking sheet to the oven. Roast the garlic for about 40-50 minutes, or until the cloves are tender.

Step 4. Remove from the skins and transfer the garlic cloves to a small bowl.

Step 5. Allow to cool at room temperature for about 10 minutes, then mash the caramelized garlic with a fork.

Step 6. Add the mayonnaise, lemon juice, and spicy brown mustard, whisking together until evenly combined.

Step 7. Taste and adjust with a little more salt if needed.

Tip: Want a smoother aioli? Just add the ingredients to a food processor or blender and blend until you’ve got the consistency you like.
