Rotisserie Chicken Noodle Soup

Ingredients

  • 1 tbsp olive oil
  • 3/4 cup carrots sliced,
  • 3/4 cup onions diced,
  • 3/4 cup celery diced,
  • 1/2 tsp minced garlic
  • 1/2 tsp basil dried
  • 1/2 tsp thyme dried
  • 1/2 tsp oregano dried
  • 6 cups chicken broth
  • 1 1/2 cup egg noodles
  • 1 cup rotisserie chicken cut,
  • salt and pepper to taste
  • parsley for garnish optional

Instructions

  • Heat the olive oil over medium heat in a large pot or Dutch oven.

  • Add carrots and sauté over medium heat for two minutes.

  • Add onion, celery, garlic, basil, thyme, and oregano and sauté until vegetables are cooked through (approximately 4-5 minutes or until the onion is translucent).

  • Add broth and bring to a boil.

  • Stir in egg noodles and cook until al dente.

  • Add the cubed or shredded chicken.

  • Season with salt and pepper to taste.

  • Simmer until warmed through.
  • Garnish with fresh parsley and enjoy!

Notes

If you don't have egg noodles, you can make this recipe with other types of pasta like penne, fusilli, or orzo. You can also use cooked rice instead of noodles.
