Equipment

Ingredients

  • 2 9.6 oz packages cooked sausage links, sliced sliced
  • 1 medium red bell pepper deseeded and diced
  • 1 medium green bell pepper deseeded and diced
  • 1/2 sweet onion diced
  • 3-5 cloves garlic minced
  • 32 ounce frozen tater tots
  • 10 large eggs
  • 1 1/2 cups heavy cream whole milk also works
  • 2 1/2 cups shredded pepper jack and cheddar cheese blend divided
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • Parsley for garnish

Instructions

  • Preheat the oven to 350 F. Grease a deep 9x13 baking pan with cooking spray and set aside.
  • In a skillet over medium-high heat, sauté the onions and garlic for 2-3 minutes until fragrant and the onions start to become translucent.
  • Add the bell peppers and sauté everything for an additional 1-2 minutes, just until the bell peppers start to soften, then remove from the heat. Be careful not to overcook them because it'll continue to cook while baking.
  • Mix the sausage in with the sautéed veggies, reserving 1/4 cup for topping, if desired.
  • In a large bowl, whisk together the eggs, the heavy cream, and all the seasonings.
  • Add the sausage and veggies mixture to the casserole dish and top with a little over half of the cheese blend.
  • Pour the egg mixture on top of the sausage mixture, and then sprinkle a little more shredded cheese on top.
  • Add the tater tots in a single layer on top (there's no need to thaw them first).
  • Add the remaining cheese and the reserved sausage and veggies over the top of the casserole.
  • Bake uncovered for 50–60 minutes. The cooking time may vary slightly. You'll know it's done when the tots are crispy, the eggs are set, and the center is cooked through.
  • Garnish with sliced green onions or chopped parsley if desired. Enjoy!

Notes

This recipe calls for precooked sausage links. If using raw sausage, make sure to cook it before adding it to the casserole dish.
