Sausage and Tater Tot Casserole

We love a good breakfast casserole and this hearty casserole is one of our favorite ways to start the day. Not only is this tater tot breakfast casserole absolutely delicious, it’s a breeze to whip up! Along with the tots, you get chunks of sausage, sauteed veggies, scrambled eggs, and lots of ooey gooey melted cheese.

It isn’t just great for breakfast or brunch. Complete with meat, veggies, and sausage and cheese, it’s versatile enough to serve for dinner too.

Another thing I really love about this recipe is that it can be made advance (making the morning routine SO much easier). Just like another one of our favorite breakfast recipes, this Italian Sausage and Egg Casserole, you just assemble it the night before, then pop it in the oven the next morning.

  • Green bell pepper, deseeded and diced
  • Sweet onion, diced
  • Garlic, minced
  • Frozen tater tots
  • Large eggs
  • Heavy cream (whole milk also works)
  • Blend of shredded pepper jack cheese and cheddar cheese
  • Salt and black pepper
  • Cayenne pepper
  • Garlic powder
  • Parsley for garnish

How to Make Tater Tot and Sausage Breakfast Casserole

Step 1. Preheat the oven to 350 F. Grease a deep 9×13 baking pan with cooking spray
and set aside.

Step 2. In a skillet over medium-high heat, sauté the onions and garlic for 2-3 minutes
until fragrant and the onions start to become translucent.

Step 3. Add the diced bell peppers and sauté everything for an additional 1-2 minutes, just until the bell peppers start to soften, then remove from the heat. You don’t want to overcook because it’ll continue to cook while baking.

Step 4. Add the sliced sausage and mix together with the sautéed veggies.
Reserve 1/4 cup for topping, if desired.

Tip: This recipe calls for fully cooked sausage links. If using raw sausage, make sure to cook it before adding it to the casserole dish.

Step 5. In a large bowl, whisk together the eggs, the heavy cream, and all the seasonings.

Step 6. Add the sausage and veggies mixture to the casserole dish and top with a little over half of the cheese blend.

Step 7. Pour the egg mixture on top of the sausage mixture, and then sprinkle a little more shredded cheese on top.

Step 8. Add the tater tots in a single layer on top (there’s no need to thaw the tater tots first).

Step 9. Add the remaining cheese and the reserved sausage and veggies over the top of the casserole.

Step 10. Bake uncovered for 50–60 minutes. The cooking time may vary slightly. You’ll know it’s done when the tots are crispy, the eggs are set, and the center is cooked through.

Step 11. Garnish with sliced green onions or chopped parsley if desired. Enjoy!

Storage Instructions

Fridge: If you have leftovers, let them cool to room temperature first. You can either cover the dish with plastic wrap or transfer the casserole to an airtight container. Store in the fridge for up to 3–4 days.

Freezer: If you want to freeze the casserole, allow it to cool completely first. Then, tightly wrap the dish in plastic and cover it with a layer of aluminum foil The casserole can be stored in the freezer for up to 2–3 months.

To reheat: Thaw it in the fridge overnight before reheating. You can reheat individual servings in the microwave until warmed through, or reheat the entire casserole in the oven at 350°F for about 20–30 minutes, or until heated through.

Breakfast Tater Tot Casserole Variations and Add-ins

  • Meat: Other types of cooked sausage work great for this recipe too. Ground breakfast sausage, turkey sausage, beef sausage, chicken sausage, or hot pork sausage are good choices. You can also use ground beef, diced ham, or cooked bacon instead of sausage.
  • Spicy version: Increase the cayenne pepper, add a diced jalapeno pepper, or just use hot sausage. 
  • Cheese options: Mix and match cheese varieties such as mozzarella, Swiss, feta, or Gouda to create different flavors.
  • Tex-Mex style: If serving this for dinner, you can use Mexican-style cheese blend and add diced green chilies, black beans, and canned corn.
  • Italian style: Replace the sausage with Italian sausage and use mozzarella cheese instead of cheddar. Mix in some Italian seasoning and diced tomatoes for added Italian flavors.
  • Hash browns: Replace the bag of tater tots with shredded hash browns for a slightly different texture.
  • Eggs: If you’re looking for a lighter version, you can use only egg whites instead of whole eggs.

  • 1 medium red bell pepper deseeded and diced
  • 1 medium green bell pepper deseeded and diced
  • 1/2 sweet onion diced
  • 3-5 cloves garlic minced
  • 32 ounce frozen tater tots
  • 10 large eggs
  • 1 1/2 cups heavy cream whole milk also works
  • 2 1/2 cups shredded pepper jack and cheddar cheese blend divided
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • Parsley for garnish
