In a large skillet, brown sausage over medium heat. Drain excess grease, then set aside a tablespoon of the sausage to use for garnish.
8 oz hot sausage, 12 oz cream cheese, 1 1/2 cups cheddar cheese, 3/4 cup swiss cheese, 1 tbsp dijon mustard
Combine sausage, cream cheese, cheddar, Swiss cheese and dijon mustard in a large bowl. Mix well.
Place ingredients into oven safe dish and cook for 15-20 minutes
To get a crustier cheese, place under broiler for the final 1-2 minutes
Garnish with sausage crumbles, cheddar and parsley (optional)
Chopped parsley for garnish
Serve hot with crackers or chips
Notes
You can make this dip the night before and keep it refrigerated until just before you need it. Then just pop it in the oven and serve.If you don't have hot sausage, you can substitute ground beef. You can add some green chilies or even pepper flakes to add a little extra heat.
