- 6 ounces Niman Ranch Uncured Pork Breakfast Sausage Links (6 sausage links)
- 1/3 cup diced bell peppers
- 1/3 cup diced onion
- 1/2 cup cheese
- 1 puff pastry sheet
- 1/2 tablespoon olive oil
Defrost puff pastry sheets according to instructions (they often need an hour to defrost)
Preheat oven to 400°
Saute diced peppers and onion in olive oil, then set aside
Cut sausage links into smaller pieces
Add 1/2 tablespoon water to frying pan and heat sausage
Cut puff pastry sheets into squares
Place in mini muffin tins
Add sausage to the bottom of each puff pastry sheet
Top with peppers
Bake at 400 for 10 minutes
Top with cheese. Bake until cheese is melted and puff pastry is golden brown (approximately 5 more minutes)
