Keeping my freezer stocked is so simple now and I love not having to worry about what's for dinner. Plus, I can keep extra food on hand for when friends come over. It saved the day on a recent Friday night when I needed appetizers in a hurry. Since I had Niman Ranch sausage stashed away in the freezer, I was able to whip up an easy appetizer in no time at all.

The beauty of this recipe is that you don't need a lot of ingredients. Just grab your sausage, puff pastry sheets, sausage, peppers and cheese. If you've got those five things, you can make an awesome appetizer that your guests are going to love. 

Sausage Puff Pastry With Peppers & Onions

Start by taking the puff pastry sheets out of the freezer and defrost according to the instructions on the package. Then dice the peppers and onions until you have 2/3 a cup.

Saute peppers and onions in olive oil.

Cut the sausages into pieces and cook on stove with 1/2 tablespoon water. These are pre-cooked so you're really just heating them up. You can mix them in with the peppers but I prefer to do it separately so that each puff pastry gets an equal amount of sausage.

When the puff pastry sheets are defrosted, cut into squares. Because the sheet was rectangular, I ended up with some extra ones. Next time I may try to roll the pastry sheet into a square first but this time I didn't bother...I just used 12 of the squares.

Place puff pastry squares into mini muffin tins and add sausage.

Next, add peppers and onion.

Bake 5 minutes at 400°, then top with cheese.

Bake 5-7 minutes more, until cheese is melted and puff pastry is a golden brown. Add salt and pepper.

Garnish with chopped parsley and serve.

I've had to hide these from my family for fear of them disappearing before guests arrive! They're SO good and the Niman Ranch sausage was perfect for this recipe.

There's no better combination than sausage, peppers and onion, especially when baked into a puff pastry. It made for the perfect bite-size appetizer!

Sausage, Pepper & Onion Puff Pastry Bites

These Sausage, Pepper & Onion Puff Pastry Bites make the perfect bite size appetizers for any occasion!

Ingredients
 

  • 6 ounces Niman Ranch Uncured Pork Breakfast Sausage Links (6 sausage links)
  • 1/3 cup diced bell peppers
  • 1/3 cup diced onion
  • 1/2 cup cheese
  • 1 puff pastry sheet
  • 1/2 tablespoon olive oil

Instructions

  • Defrost puff pastry sheets according to instructions (they often need an hour to defrost)
  • Preheat oven to 400°
  • Saute diced peppers and onion in olive oil, then set aside
  • Cut sausage links into smaller pieces
  • Add 1/2 tablespoon water to frying pan and heat sausage
  • Cut puff pastry sheets into squares
  • Place in mini muffin tins
  • Add sausage to the bottom of each puff pastry sheet
  • Top with peppers
  • Bake at 400 for 10 minutes
  • Top with cheese. Bake until cheese is melted and puff pastry is golden brown (approximately 5 more minutes)
