For The Brownies

  • 1/2 cup butter melted
  • 15.25 ounces strawberry cake mix 1 box
  • 2 eggs
  • 1 teaspoon vanilla extract

For The Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1 1/2 tablespoons strawberry preserves

Instructions

  • Preheat your oven to 350°F and line an 8x8 baking dish with parchment paper and set it aside for easy removal of the strawberry brownies later.
  • Melt the butter in a microwave-safe bowl using 20 to 30 second bursts until fully melted.

  • In a medium mixing bowl, stir together the dry strawberry cake mix, vanilla extract, and melted butter using a rubber spatula or wooden spoon.

  • In a separate bowl, whisk the eggs, then add them to the cake mix batter.

  • Stir until everything is well combined. The brownie mixture will be thick.
  • Pour the strawberry brownie batter into the prepared baking dish and spread it evenly with your spoon or spatula.
  • Bake for 20 to 25 minutes, or until the edges of the brownies look set. A toothpick inserted in the center should come out clean. Remove the brownies from the oven and let them cool completely before adding the glaze.
  • In a small bowl, whisk together the powdered sugar, milk, and strawberry preserves to make the strawberry glaze.

  • When the brownies have cooled, lift them from the pan using the parchment paper. Spread the glaze evenly over the top of the brownies using a butter knife and let it dry.
  • Once the glaze has set, cut the brownies into squares and serve.

Notes

    • Don’t overmix the batter after adding the eggs. Just stir until everything comes together to keep the texture soft and chewy.
    • If your glaze starts to look cloudy or too thick, warm it slightly in the microwave for a few seconds and stir again.
    • To double the recipe, use a 9x13 baking dish and increase the bake time by about 5 minutes. Be sure to keep an eye on the center.
