Strawberry Brownie Recipe

It only takes one batch of these Strawberry Brownies to turn them into a forever favorite. The first time I baked them, I couldn’t believe how easy they were (or how quickly the whole pan disappeared)! With chewy edges, a soft center, and a sweet strawberry glaze, every bite was totally irresistible.

There’s no mixer needed and no complicated steps, just one bowl, cake mix, and a simple strawberry glaze. Poured over warm brownies, the glaze soaks in, adding an extra delicious burst of strawberry goodness. I’ve made these brownies for potlucks, holidays, or just a weekend treat, and there’s never a crumb left behind.

Ingredients

Ingredients for strawberry cupcakes displayed on a marble counter: eggs, butter, milk, vanilla extract, strawberry preserves, powdered sugar, and strawberry cake mix.
  • Strawberry cake mix: Shortcut that gives these brownies their bold strawberry flavor with no need for extra food coloring or strawberry flavoring.
  • Eggs: They help bind the batter and give that soft, chewy texture we love in a brownie.
  • Butter, melted: Adds richness and helps create that dense brownie texture. Make sure it’s fully melted and slightly cooled.
  • Vanilla extract: Balances the sweetness and brings out that classic bakery-style flavor.
  • Powdered sugar: Used for the glaze to give it that smooth, sweet finish.
  • Milk: Thins the glaze just enough to spread easily over the cooled brownies.
  • Strawberry preserves: Gives the glaze color and strawberry flavor. Choose one with visible strawberry bits for extra texture.

Variations and Add-ins

  • Chocolate: Fold milk chocolate or white chocolate chips into the batter for a chocolate covered strawberry flavor.
  • Garnish: You can add freeze-dried strawberries on top for a fun strawberry garnish. Or for parties, press a few sprinkles into the top.
  • Jam: Use strawberry jam instead of preserves for a smoother glaze texture.
  • Extract: Swap the vanilla extract with almond extract for a slightly nutty twist.
  • Fresh berries: Top the brownies with fresh strawberries right before serving for a fresh, fruity bite.
  • Nuts: Add a handful of chopped nuts if you like a little crunch.
  • Shapes: Use heart-shaped cookie cutters to make them extra cute for Valentine’s Day or showers.

Tips and Tricks

  • Don’t overmix the batter after adding the eggs. Just stir until everything comes together to keep the texture soft and chewy.
  • If your glaze starts to look cloudy or too thick, warm it slightly in the microwave for a few seconds and stir again.
  • For more even baking, rotate the pan halfway through if your oven has hot spots.
  • If you want cleaner edges when slicing, you can chill the brownies for 10 to 15 minutes before slicing.
  • For easier cleanup, spray the parchment paper lightly with nonstick spray so nothing sticks.
  • For a more vibrant colored glaze, you can stir in a tiny bit of strawberry powder or a drop of food coloring.

FAQs

How do I know when my strawberry brownies are done?

The edges should look firm and slightly pull away from the pan. The center should not jiggle when you give the pan a gentle shake.

Can I use another cake mix flavor?

For this strawberry brownie recipe, the strawberry cake mix gives that signature flavor. But vanilla or lemon would work for a fun twist.

Can I double the recipe?

Yes, just use a 9×13 baking dish and increase the bake time by about 5 minutes. Be sure to keep an eye on the center.
