Watermelon Rice Krispie Treats

These Watermelon Rice Krispie Treats are a fun, new version of everybody's favorite classic treat. All the gooey marshmallow and crunchy cereal taste, combined with a cute watermelon look, make these the perfect dessert for all your summer parties.

Ingredients

  • 3 tbsp butter divided
  • 6 cups mini marshmallows divided
  • Green gel food coloring we used a mix of neon green and regular green
  • 6 cups Rice Krispies divided
  • Red & pink gel food coloring
  • 1 tbsp mini chocolate chips

Instructions

  • Spray a 10-inch cake pan or springform pan with non-stick cooking spray. Set aside.
  • Melt 1 tablespoon of butter in a large saucepan over medium heat. Add 2 cups of miniature marshmallows and continue cooking, stirring constantly until the marshmallows are melted and smooth.

  • Add several drops of green food coloring and 1-2 drops of neon green. Stir until the color is incorporated into the melted marshmallows and no streaks remain.

  • Remove the melted marshmallows from the heat and stir in 2 cups of Rice Krispies cereal.

  • Drop the green cereal mixture by large spoonfuls around the outside of the prepared pan. Press the green Rice Krispies mixture evenly around the edge of the pan, forming a 1 ½ inch ring.
  • In another large pot, melt 2 tablespoons of butter. Add 4 cups of marshmallows and heat, stirring constantly until melted.

  • Add several drops of red food coloring and 1-2 drops of pink. Stir to incorporate, until the mixture is a bright pink color and no streaks remain.

  • Remove the marshmallow mixture from the heat and stir in 4 cups of Rice Krispies cereal.
    6 cups Rice Krispies
  • Press the pink Rice Krispies into the center of the pan, filling the green ring. Be sure to smooth out evenly and press the mixture up against the green ring. Push just as much as you need to though. If you push too strongly, your treats may be too hard.
  • Allow the Rice Krispie treats to cool completely and set. Before serving, press miniature chocolate chips into the pink section to look like watermelon seeds. Cut into slices and enjoy!

Notes

To keep the Rice Krispie mixture from sticking to your hands, use a piece of wax paper or parchment paper to push down or spray your hands with non-stick cooking spray.
