Watermelon Rice Krispie Treats

These Watermelon Rice Krispie Treats are a new, fun version of the classic treats. With all the gooey marshmallow taste combined with a cute watermelon look, they’re the perfect dessert for all your summer parties.

If you’re a fan of Rice Krispies treats (and really, who isn’t?) this watermelon version is a fun variation that you’ll want try this summer. It has the same gooey marshmallow flavor and crispy rice texture as our Rainbow Rice Krispie Treats and Red Velvet Rice Krispie Treats, but it’s colored and shaped to look like cute little watermelon slices!
The best part is that they’re so fun and easy to make. You’ll use a round pan and gel food coloring to create the bright pink watermelon color in the center of the cake pan and green rind around the edge. Mini chocolate chips create the seeds for the perfect finishing touch.

Ingredients

- Butter, divided
- Miniature marshmallows, divided
- Rice Krispies cereal, divided
- Green gel food coloring (we used a mix of neon green and regular green)
- Red and pink gel food coloring
- Miniature chocolate chips
How to Make Watermelon Rice Krispie Treats
Step 1: Spray a 10-inch round cake pan or springform pan with non-stick cooking spray. Set aside.
Step 2: Melt 1 tablespoon of butter in a large saucepan over medium heat. Add in 2 cups of miniature marshmallows and continue cooking, stirring constantly until the marshmallow mixture is completely melted and smooth.
Step 3: Add several drops of green food coloring and 1-2 drops of neon green food coloring and stir. Continue until the color is incorporated into the melted marshmallows and no streaks remain.


Step 4: Remove from heat and stir in 2 cups of Rice Krispies cereal.
Step 5: Drop the green cereal mixture by large spoonfuls around the outside of the prepared pan. Press the green Rice Krispies mixture evenly around the edge, forming a 1 ½ inch ring.


Step 6: In another large pot, melt 2 tablespoons of butter. Add remaining marshmallows and constantly stir until the marshmallows have completely melted.
Step 7: Add several drops of red food coloring and 1-2 drops of pink. Stir to incorporate, until the mixture is a bright pink color and no streaks remain.


Step 8: Remove the mixture mixture from the heat and stir in 4 cups of Rice Krispies cereal.
Step 9: Press the pink Rice Krispies into the center of the pan, filling the green ring. Pat down until smooth, pressing the mixture up against the green ring. Push just as much as you need to though. If you push too strongly, your cereal mixture may be too hard.


Step 10: Allow the mixture to cool completely and set. Before serving, press chocolate chips into the pink portion to look like seeds. Cut into slices and enjoy!

Tips & Tricks
- Use a piece of wax paper or parchment paper, or spray your hands with non-stick cooking spray when pressing the mixture into the pan. This will help prevent the mixture from sticking to your hands.
- If you don’t have mini chocolate chips, the regular sized ones will also work in this recipe.
- Instead of coloring the actual cereal treats, you can cover the edge of the treats with green icing and fill in the center with pink or red to make the watermelon colors.

You can store your leftover treats in an airtight container in the refrigerator for up to five days or at room temperature for about 2 days. To help keep them soft, you can wrap each treat individually with plastic wrap before placing it in the container.
You can! To add watermelon flavor, stir in about 1/3 of a package of watermelon Jello mix to the butter mixture for the green layer before adding the marshmallows. Then do the same with the remainder of the package for the pink layer.
