Rim the glasses by rubbing a lime wedge around the rim of each glass, then dipping the rim into a small dish of coarse salt.

Place the frozen watermelon chunks, honey, fresh lime juice, water, and mint leaves in the blender or food processor. Blend on high speed until the mixture is smooth and well-combined.

Taste the mixture and adjust the level of sweetness to your taste. You can add more honey to make it sweeter or extra lime juice to make it more tart.
Add ice cubes to the blender and blend again on high speed. Continue until the mixture is frothy and smooth.

Pour the frozen watermelon cocktail into a glass rimmed with salt. Garnish with a skewer of watermelon balls and a lime wedge.

Notes
You can make this recipe with fresh watermelon too. You may just need to add more ice to the blender to get the slushie consistency you like.
