Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1 1/2 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup crushed peppermints
  • 1 cup white chocolate chips

Instructions

  • Preheat the oven to 350 degrees and line a large cookie sheet with parchment paper.
  • Using a hand or stand mixer, beat together the butter, white sugar, brown sugar, and shortening in a large bowl until light and fluffy.

  • Add in the vanilla extract and peppermint extract and continue to mix.

  • Mix in the eggs, then turn the mixer down to low before adding the dry ingredients. Mix in the baking soda and salt, then gradually add the flour.

  • Mix in the crushed peppermints and white chocolate chips.
  • Form the cookie dough into 1 tbsp balls, placing them 2 inches apart on the baking sheet. Bake for 8-10 minutes.
  • Remove the cookies from oven and let them sit for a few minutes before transferring them to a wire cooling rack to cool completely. Serve and enjoy!
