Preheat the oven to 350 degrees and line a large cookie sheet with parchment paper.
Using a hand or stand mixer, beat together the butter, white sugar, brown sugar, and shortening in a large bowl until light and fluffy.

Add in the vanilla extract and peppermint extract and continue to mix.

Mix in the eggs, then turn the mixer down to low before adding the dry ingredients. Mix in the baking soda and salt, then gradually add the flour.

Mix in the crushed peppermints and white chocolate chips.
Form the cookie dough into 1 tbsp balls, placing them 2 inches apart on the baking sheet. Bake for 8-10 minutes.
Remove the cookies from oven and let them sit for a few minutes before transferring them to a wire cooling rack to cool completely. Serve and enjoy!
