If you read my blog regularly, you already know that one of the many reasons we moved to Florida was for the weather!  Laugh if you want, but winters in Atlanta were just way too cold for us!  We wanted to live in the land of sunshine and palm trees.  However, on the flip side, there are a lot of summer storms in Florida.  It’s totally worth it but we do have to come up with ways to entertain ourselves when we’re stuck inside on a rainy day.

It’s usually not too hard to find something fun to do.  We play games, watch movies, read books, color and sometimes even make something crafty.  However, one of the things my girls REALLY love to do is to take over the kitchen and make yummy treats.  Sometimes it’s something as simple as chocolate chip cookies but other times we get creative and come up with our own crazy concoctions.

Since we’re always hoping to see a rainbow at the end of any summer storm, we let that be our inspiration this time.  I checked the pantry to see what we had on hand and immediately saw the Chex Mix.  Fortunately we were all stocked up because I’d just shopped the Summer Storm Stockup promotion at Publix (like I need an excuse to buy Chex Mix!).  Now through July 10th, if you buy $30 worth of participating items you can register to receive a $10 Publix gift card.  I love this promotion because a lot of these items are things I’d be buying anyway.  If they want to give me $10 back, I’m all for it! It was so easy to redeem my reward.  First I took a picture of my receipt.

Then I registered at the Summer Storm Stockup page.  Once I registered, it took me to this page:

I entered the amount and date of my purchase, then uploaded the receipt…it’s that easy!  You can go back and check the status anytime to find out when your gift card is on the way.  Don’t forget, you can also participate up to three times to earn a total of $30.  

Since we had plenty of Chex Mix on hand now, the girls and I got to work on our Rainbow Snack Mix!  I kind of have a thing for making rainbow foods anyway! Anyway, I gave the girls free reign to choose what they wanted from the pantry.  As kids will do, they made a couple interesting choices but I just went with it. In the end we had white and dark chocolate chips, candy covered chocolate, mini-marshmallow, popcorn and Sunkist fruit flavored snacks.  I also pulled out some candy melts to top off our creative concoctions.  A good blogger ALWAYS has candy melts on hand…you never know when you’re going to need them!

The girls couldn’t wait to get started and made rainbow mixes that suited their personalities completely.  Ashling, my quiet one,  took a little at a time and only added a few ingredients.  Keira, on the other hand, is an “all-in” kind of girl and grabbed candy, marshmallows and chocolate chips by the handful, eating and mixing as she went!!!  I fell somewhere in the middle…

Now it was time for the best part.  I microwaved some candy melts and poured them into snack bags.  Then I cut a little tip off each corner and we were ready to make a rainbow appear!

True to form, Ashling didn’t want to add anything else to her mix and started eating hers right away.  However, little Keira couldn’t wait to get started! What could possibly be better than playing with candy?!  We had a lot of fun, though I may have overdone it a little.  Wait, there’s no such thing as overdoing it when it comes to candy melts…never mind!

After mixing it up a little, we were ready to start eating!

We enjoyed our delicious snacks but since it was still raining, we decided to have fun with another one of our favorite rainy day activities.  We pulled out the crayons and started coloring…rainbow pictures of course!

(Says the FL-native gal) I was laughing when I first saw this photo of the mix, because I thought the candy melts were actually play doh…keep in mind that my daughter is currently squeezing out ropes and ropes of “hair” with hers right now… 😉 So glad you joined us at #FridayFrivolity this week!
