Don’t have time to spend hours making dinner? These Teriyaki Chicken Skewers are quick, easy, and best of all, absolutely delicious!
I was watching an old B&W TV show the other day and had the realization that I would have made a terrible 50’s wife and mother. While I like making fancy meals now and then, if I had to spend three hours in the kitchen every single day, I’d probably lose my mind.
I’m all about quick and easy recipes, since most days we’re running around to after school activities and trying to get shopping and other errands done. The great part is that even when I don’t have a lot of time to make dinner, I can still whip up something last minute that’s easy, healthy and most important, delicious.
This recipe for Teriyaki Chicken Skewers is my newest favorite. Not only does it have just six ingredients, but they are ingredients I usually have on hand anyway. That way if I forget to plan ahead for dinner, a regular occurrence with me, I always have a fallback plan. Everything you need for this recipe can be found at Publix. You’ll want to pick up Minute® White Rice, Dole® Pineapple in 100% Pineapple Juice, Kikkoman® Teriyaki Sauce, ginger, green pepper and boneless chicken breasts.
Rice is a staple in our pantry because it goes with almost anything and you can’t get much easier than Minute White Rice. Just pour it into a pot of boiling water and you have fluffy white rice in just five minutes. We always eat our rice with Kikkoman Soy Sauce since it adds flavor to the rice that you just can’t get without it. Seriously, my girls won’t even eat rice if we are out of soy sauce! However, if you’re making this recipe, the unique flavor of Kikkomans Teriyaki Sauce is going to be perfect.
Dole Pineapple Chunks are another thing that you’ll always find in my pantry. My girls love to eat them plain but they’re also perfect for recipes like stir fries, regular or fruit salads and even desserts. Plus, it’s a super easy way to sneak in some extra Vitamin C.
Once you have all your ingredients, it’s time to get cooking. First you’ll want to peel and chop the ginger, then cut the green pepper.
Saute the chicken in Kikkoman teriyaki sauce until it’s cooked about halfway through.
At that point, add your peppers and ginger and tir frequently over medium heat.
When your chicken is completely cooked, add the Dole Pineapple Chunks just long enough to warm them.
Remove from heat, let cool for a few minutes, then add to skewers. Serve the finished teriyaki chicken skewers over Minute White Rice and enjoy.
This dish was such a big hit with my family that by the time they were finished, there was nothing left but a few empty sticks!
I think these will be great on the grill too. We’ll definitely have to try it next time we’re cooking out.
This is the perfect meal for those days when we’ve been out and about and I’ve saved dinner for the last minute! My family doesn’t care if something takes 3 hours or 30 minutes, just as long as it tastes this good, they’re perfectly happy!

Easy Teriyaki Chicken Skewers

Ingredients
- 2 large chicken breasts
- 1 1/2 cups Dole Pineapple Chunks
- 1 green pepper, cut into 1/2 inch pieces
- 2 tbsp. fresh ginger, chopped
- 5 tsp Kikkoman Teriyaki Marinade & Sauce, separated
- 2 cups Minute Rice
Instructions
- Begin boiling water for rice
- Cut chicken into chunks, then saute with 3 tsp. teriyaki sauce
- Saute until chicken is cooked halfway through, then add green peppers and ginger
- Add two cups of Minute Rice to boiling water. Stir and cover.
- Continue to saute chicken and peppers until chicken is cooked through
- Add pineapple and stir for one minute
- Remove from heat
- Once food has cooled to the touch, load onto skewers
- Serve over rice, drizzling the remaining teriyaki sauce over the top
