Parmesan chicken breast cut apart

Easy chicken recipes are always my favorite quick meal ideas. I know the whole family will love them, but it can be really hard to find new ways to keep them interesting. That’s not a problem with this chicken dish though.

It starts with tender, succulent chicken that’s coated with a mayonnaise mixture, then topped with grated parmesan cheese. The combination of mayo and cheese gives the chicken so much flavor and moisture. Once baked, you get a savory golden brown crust that’s absolutely amazing.

If your family loves chicken for dinner as much as mine, you’ll also want to check out this scrumptious Chicken Piccata or Grilled Chicken Kabobs. They’re both perfect for when you need a delicious dinner in a snap!

Tips For the Best Baked Chicken With Mayo

  • If you have really thick chicken breasts, you may want to pound them into thinner pieces with a meat mallet. They’ll cook a little quicker and more evenly.
  • This is a make ahead recipe. Just prepare the chicken with the mayo mixture and parmesan then cover with plastic wrap and place it in the fridge overnight.
  • If the parmesan cheese begins to brown too much, loosely tent the top of the baking dish with some aluminum foil.
  • Fresh chicken breasts are like a blank canvas, so to prevent them from tasting bland, you’ll want to be generous with seasonings.

How Long Do I Cook Chicken Breasts in the Oven?

How long you bake the chicken all depends on the size of the chicken. If you’re using large pieces, they’ll take longer than smaller ones. On average you can figure on approximately 25-30 minutes baking time for boneless skinless chicken breast halves.

To ensure you don’t end up with dried out or undercooked chicken you should bake chicken until the internal temperature reaches 165 degrees Fahrenheit on a meat thermometer inserted in the thickest part of the breasts.

Are Chicken Breasts Healthy?

Yes, they’re one of the best foods when you’re looking for low fat and low carb meal options. Not only is it a super lean source of protein, it’s also a great source of niacin, selenium, and phosphorus that can be linked to numerous health benefits. Mayo Parmesan Chicken Variations

  • Mayo: We used 1/2 cup mayonnaise, but you can add Greek yogurt or sour cream for a little tanginess.
  • Chicken: You could also use boneless chicken thighs, chicken cutlets or chicken tenders. Just be sure to adjust the cooking time accordingly.
  • Cheeses: Try this recipe with different types of cheese or even a combination of cheeses. Asiago, Romano and Manchego are all great choices. If you want a gooey cheese topping, add mozzarella cheese to the top of the chicken about 5 minutes before you take it out of the oven.
  • Toppings: The parmesan cheese forms a crunchy golden crust when it bakes up, but you could also sprinkle with bread crumbs. Panko bread crumbs or Italian bread crumbs taste great when mixed in with the parmesan cheese.
  • Seasonings: It’s really fun to play around with any seasonings you’d like. Add a little lemon pepper, Italian seasoning or even ranch dressing to the creamy mayo mixture. If you like a little added heat, you can add a pinch cayenne pepper or a dash of hot sauce to the mayo.
