This one is for all the chocolate lovers out there. These truffle-like treats are like little bites of heaven, featuring a decadent, brownie center and a crispy dark chocolate coating. The best part is that all you need to make this recipe is a batch of baked brownies, some cream cheese, and candy melts. They’re super fun to make and even more fun to eat.

You can use any brand of brownie mix you prefer, but make sure to use one that is either double or triple chocolate so they’ll have that extra fudgy flavor.

  • Supreme Triple Chunk Brownie Mix, prepared as to package instructions
  • Cream cheese, softened to room temperature
  • Dark chocolate melting wafers
  • Vanilla melting wafers (used for the white drizzle on top)

How To Make Brownie Balls

Step 1. Preheat the oven and bake brownie mix according to package instructions. Set aside and allow to cool completely.

Step 2. Add the cream cheese to a large mixing bowl or the bowl of a stand mixer. Using a hand mixer, beat until it’s smooth and creamy.

Step 3. Crumble the cooled brownies and add into the bowl with the cream cheese.

Tip: Make sure the brownies have fully cooled completely otherwise it may melt the
cream cheese, making the brownie mixture difficult to roll into balls.

Step 4. Use the hand mixer on medium speed and mix until fully combined. The mixture should be soft. Next, place the mixture in the refrigerator to chill for 30 minutes before shaping into balls.

Step 5. Line two baking sheets with parchment paper. Use a 1 ½” cookie scoop to scoop up even sized balls and roll them into balls in the palm of your hands until smooth, then place back onto the baking sheet.

Step 6. Repeat with the rest of the mixture and chill in the fridge for an additional hour.

Dipping And Decorating The Brownie Bites

Step 1. Once the balls have fully chilled, place the dark chocolate melting wafers in a double boiler and melt over low heat, stirring every 30 seconds until melted and smooth. Do not overheat, otherwise the melts may scorch and seize up.

Note: You can also melt it in a microwave safe bowl, heating it on a low or defrost setting and stirring the contents in 30 second intervals until fully melted and smooth.

Step 2. Use a fork to dip the brownie balls one at a time into the melted chocolate. When lifting out of the chocolate, lightly tap the fork on the edge of the boiler to remove any excess chocolate.

Step 3. Slide the ball off the fork and place back onto the lined baking sheet. Repeat with the remaining balls.

Step 4: Place the vanilla melting wafers into a small piping bag. Microwave on a low or defrost setting in 30 second increments, massaging the bag between each set so that it heats evenly.

Note: You can also melt chocolate in a small bowl then transfer it to the piping bag.

Step 5. Snip off a small piece of the tip. Drizzle the additional chocolate over the top, going back and forth over the coated balls.

Step 6. Place back into the refrigerator to allow the coating to finish setting. Keep refrigerated until ready to eat. Enjoy

Delicious Brownie Ball Variations and Add-ins

  • Chocolate coating: We used a chocolate coating for this recipe. You can also roll the balls in crushed Oreos, coconut flakes, chocolate sprinkles or mini dark chocolate chips instead of the chocolate coating.
  • Peanut butter: Substitute a tablespoon or two of the cream cheese for a tablespoon of creamy peanut butter.
  • Mint chocolate chip: Add chopped mint chocolate, mint extract or mini mint chocolate chips into your brownie mixture.
  • Espresso powder: You can intensify the chocolate flavor by mixing in instant espresso powder or strong brewed coffee.
  • Nuts: Want to add a bit of crunch factor. Mix 1/2 cup finely chopped pecans, almonds or walnuts into the brownie and cream cheese mixture.
  • Box mix: This recipe calls for triple chocolate brownie mix but you can use fudgy brownie mix you like. Or if you don’t want to use a box mix, feel free to use your favorite homemade recipe for brownies instead.

  • Use nonstick spray: Using a scoop helps portion out the brownie mixture. If it leaves a sticky residue causing the dough to stick, spray the scoop with a little nonstick cooking spray.
  • Use a clean, dry bowl: If you’re using a microwave to melt the chocolate wafers, make sure there’s no moisture in the bowl. This can cause the chocolate to seize.
  • Use a toothpick: To help slide the ball off of the fork, use the tip of a toothpick or small skewer to help give it a push. If you happen to drop the balls into the chocolate, you can just use a fork and toothpick to help you gently lift it out.
