Potatoes with goat cheese

I love having friends over, especially since we moved into our new neighborhood. We’ve totally lucked out and have some really cool neighbors! Friday nights on our street are for hanging out, watching the kids play and enjoying our favorite wine and appetizers.

Most of the time our appetizers are simple snacks like cheese and crackers or chips and dip. However, there’s the occasional Friday when I get adventurous and want to take things up a notch. That’s where these cool purple potatoes come in.

Lately I’ve been making a lot of recipes with Tasteful Selections bite size potatoes. Not only do they taste amazing but there are 10 different flavors to choose from. I love the variety and have used them for everything from Lemon Rosemary Chicken to my favorite breakfast potatoes with ham, onions and mushrooms!

They pack a ton of great taste in a small bite but the best part is that they make cooking so easy! These potatoes come triple washed AND you don’t have to peel them…they’re practically MADE for busy moms like us! Prep is so much easier and because of their size, they cook faster too. (They totally had me at “no peeling”)

Now it was time to turn them into an appetizer and I was feeling adventurous. Tasteful Selections’ Purple Passion seemed like the perfect choice for making bite size potatoes with goat cheese!

When I was coming up with ways to use them, goat cheese kept coming to mind. I love using it in appetizers and combining it with purple potatoes just sounded fun! (Speaking of fun, don’t forget to enter to win the Adventure In A Small Bite prize package at the end of this post).

Mini Potatoes With Goat Cheese 

Ready to get cooking? Start by making your balsamic glaze. It sounds fancy but don’t let that scare you. It’s really SO easy! Just bring balsamic vinegar to a boil, then reduce heat to medium. Stir frequently until the vinegar begins to thicken (about 6-8 minutes).

You’ll know it’s ready when it leaves a thick black film on the spoon. It’ll also thicken a little more as it cools. Set aside to cool.

Now, cut 12 Purple Passion potatoes in half, lengthwise.

If any of the potatoes are uneven on bottom, you can slice a little off to even them out. This way they won’t topple over when you fill them.

Toss potatoes in 1/2 tbsp of olive oil and turn face down on a cookie sheet. Sprinkle sea salt over the top and bake at 425 for 15 minutes.

Once the potatoes are finished baking, scoop out the insides. You may have to wait a minute or two if they’re too hot.

Brush the insides of the potatoes with olive oil and broil for 2-3 minutes, just until they get a little crispy. Be sure to keep an eye on them so they don’t burn.

Combine cream cheese and goat cheese, mixing until well blended. I used plain goat cheese for this recipe but I think herbed goat cheese would taste pretty awesome too.

Put the cheese mixture in a pastry bag and fill potatoes (if you don’t have a pastry bag, you can cut off the corner of a sandwich bag and use that instead).

Drizzle with reduced balsamic.

All that’s left now is to enjoy! I love trying new appetizer recipes and the goat cheese and purple potatoes went perfectly together.

There are so many things you can do with these potatoes. I tried a variation of this recipe with their Honey Gold flavor and stuffed them with mozzarella and prosciutto. They were every bit as good as they sound!

Mini Potatoes With Goat Cheese & Balsamic Glaze

Take your appetizers up a notch! These mini potatoes with goat cheese and balsamic glaze will be a hit at your next party!

Ingredients
 

  • 12 Tasteful Selections Purple Passion Potatoes
  • 2 oz. goat cheese
  • 2 oz cream cheese
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil separated

Instructions

  • Preheat oven to 425
  • Cook balsamic vinegar in a saucepan over medium heat.
  • Stir frequently until vinegar is thick enough to coat the spoon (6-8 minutes). Remove from heat and set aside.
  • Cut potatoes in half, lengthwise
  • Toss in 1/2 tbsp olive oil
  • Place cut side down on baking sheet.
  • Sprinkle with 1/2 tbsp sea salt
  • Bake 15 minutes
  • Mix goat cheese and cream cheese together and fill icing bag
  • Once potatoes have cooked and are cool enough to handle, scoop out the inside.
  • Turn oven to broil and cook potatoes for about 2 minutes (keep an eye on them so that they don't burn)
  • Mix goat cheese and cream cheese and fill icing bag
  • Pipe into potato shells
  • Drizzle balsalmic vinegar over the top
  • Enjoy!
