Happy Labor Day! I hope everybody is having wonderful holiday weekend! I’m spending some quality family time in Sanibel and wishing my hubby never had to go back to work. It’s about time our lottery numbers hit, don’t you think?! Anyway, it’s time for another Meal Plan Monday Challenge…here’s how I did last week:
Because of our schedule, we had two family meals last week. The first was this Slow Cooker Coca-Cola BBQ Chicken.
Jackpot! I’m still learning to use my slow cooker and have had some issues with overcooked chicken. I finally used the probe feature on my slow cooker and this chicken came out perfectly! The Coca-Cola and BBQ sauce kept it juicy and it was a hit with the family.
I also cooked these Mustard Balsamic Pork Chops With Rosemary which also turned out great, though next time I’ll use a little less balsamic than is recommended in the recipe.
I planned both of these meals specifically because I’m trying to shop my pantry…meaning, I’m trying not to buy any more unnecessary food until I use up some of what I already have. I had the ingredients for both of these recipes already so that’s why I chose them.
The Grocery Store:
I am rockin’ this part of the challenge. Every week I’ve managed to go to the store just once and I LOVE it. No more dragging the kids out mid-week to pick up just one or two items…then out again the next day to pick up one more. Having a list has really helped with this and I don’t know why I haven’t always been doing it this way.
Wow…this is the best I’ve done yet! My budget is $125 and I spent $111.02! Mostly this was due the fact that I’m buying as little as I can until we clear out our pantry and freezer a little bit. It will probably go up again once I start shopping normally but for now I’m going to enjoy the fact that I came in $13.98 under budget…woohoo! (Disclosure: I did actually buy an extra gallon of milk while I was in Target shopping for a DVD for the girls…however, even with that purchase, I’m STILL under budget)
This week’s meal plan ideas:
Usually I spend a lot of time looking at recipes for this post, getting sucked up into Pinterest and searching all the food blogs. I actually really enjoy it but I just didn’t have time this week. While I was working on a different blog post, I found a ton of great recipes on the sites of some popular food brands such as Kraft and Progresso. I cheated a little bit and all these recipes are from the pages of the brands I’m working with right now…why scour the internet when I had awesome recipes at my fingertips! I actually REALLY want to try this Zucchini Noodles w/ Mushroom Marinara soon…it looks so delish!
I’m going to include a very special dessert recipe for you this week…special because it’s my first ever original recipe! I’ve never been much of a “do-it-yourself cook” and usually just follow recipes so I’m pretty excited (and a little surprised) with how this turned out. It was super easy to make too, so if you saved room for dessert you may want to give it a try!
