Looking for an easy dinner recipe that your family will love? Don’t wait for Taco Tuesday to serve these Cilantro Lime Shrimp Tacos…they’re perfect for any night of the week!
My family loves tacos but for some reason our Taco Tuesday always seems to fall on a Monday. It’s almost become a running joke in our family because we never actually have tacos on a Tuesday. We don’t care. Like my turkey meatloaf, shrimp stuffed peppers and baked ziti with veggies, these cilantro lime shrimp tacos have become a family favorite!
Since our house is filled with shrimp lovers, I thought I’d give shrimp tacos a try this time. My favorite thing about them is how easy they are to make. I am way too busy, even in the summer, to spend all night cooking a meal. I prefer an easy dinner recipe, but it has to be delicious too. This one definitely fits the bill!
Cilantro Lime Shrimp Tacos
Start with 1/4 pound of shrimp and add 1/4 cup of chopped cilantro and the juice from 1 1/2 limes.
After marinating for at least an hour, cook over medium heat.
That was the hardest part…not so bad, right? Now, take your tortilla shell and add shrimp.
Next, add your avocados…
purple onion and shredded lettuce…
and gorgonzola cheese.
Finally, add the cilantro lime dressing. I just used a store bought dressing but if you have extra time, you can always make your own.
Now you’re ready for dinner!
This is such an easy dinner recipe, perfect for when we’ve been out and about and get home late.
These turned out so good that I could eat them every night of the week!
My littlest doesn’t eat shrimp so I left it off hers and she loved them just the same. I think I may even try it with chicken next time.
