My family loves tacos but for some reason our Taco Tuesday always seems to fall on a Monday. It’s almost become a running joke in our family because we never actually have tacos on a Tuesday. We don’t care. Like my turkey meatloaf, shrimp stuffed peppers and baked ziti with veggies, these cilantro lime shrimp tacos have become a family favorite!

Since our house is filled with shrimp lovers, I thought I’d give shrimp tacos a try this time. My favorite thing about them is how easy they are to make. I am way too busy, even in the summer, to spend all night cooking a meal. I prefer an easy dinner recipe, but it has to be delicious too. This one definitely fits the bill!

Cilantro Lime Shrimp Tacos

Start with 1/4 pound of shrimp and add 1/4 cup of chopped cilantro and the juice from 1 1/2 limes.

After marinating for at least an hour, cook over medium heat.

Cook shrimp over medium heat.

That was the hardest part…not so bad, right? Now, take your tortilla shell and add shrimp.

Next, add your avocados…

and gorgonzola cheese.

Finally, add the cilantro lime dressing. I just used a store bought dressing but if you have extra time, you can always make your own.

Ingredients
 

  • 1/2 lb shrimp peeled & deveined
  • 1 1/2 limes
  • 1/4 cup chopped cilantro
  • 1/2 avocado cut into chunks
  • 1/4 purple onion. cut into thin slices
  • 1 cup shredded lettuce
  • 2/3 cup gorgonzola cheese
  • 2/3 cup cilantro lime dressing
  • 6-8 small tortillas

Instructions

  • Combine shrimp, cilantro and the juice from 1 1/2 limes. Mix well
  • Let marinate at least one hour
  • Cook over medium heat until shrimp is pink and cooked through.
  • Fill tortillas with shrimp, avocado, purple onion, lettuce and gorgonzola.
  • Drizzle with cilantro lime dressing
  • Enjoy
