Corn Dip For Summer Parties

This corn dip is one of our favorite hot dip recipes! With just five ingredients, including Fresh From Florida sweet corn, it’s as easy to make as it is delicious!

Summer is here and you know what that means…time for those summer parties! I’m so excited to be in a new house and have been looking forward to getting together with my new neighbors. I decided to put together a little party on a recent Friday night so we could all get to know each other better.

Of course, you can’t have a party without lots of food and I decided to whip up my favorite corn dip. All I needed was a couple ears of Fresh From Florida sweet corn and a few other ingredients.

Luckily sweet corn is in season right now and having access to fresh food year round is one reason why I love living in Florida so much. With Fresh From Florida, I have all the fresh fruits and veggies that I need, not matter what time of year it is!

I look for the Fresh From Florida logo whenever I’m at the grocery store because I know anything with that label is going to be delicious and bursting with flavor. Sweet corn is a great example. The kernels are plump and juicy and perfect for eating as is or as part of a recipe.

It’s not all fruits and veggies though. Fresh From Florida also gives us the freshest seafood! We’re all seafood lovers and one of our favorite recipes is Shrimp And Clams Over Rice because it’s got a little bit of everything. If you don’t live in Florida, you may want to consider moving here for the food alone!

Right now we’re all about the corn though and this easy corn dip recipes is one of my favorites. It’s seriously good and always one of the first foods to disappear!

 Corn Dip

I don’t know about you but recipes with a page full of ingredients totally scare me off! That’s why this one is so awesome. You just need five ingredients and very little prep time. 

To get started, cut the kernels off two ears of sweet corn. I’ve found it’s easier to do it over a cookie sheet. If you use a bowl, it can be hard to get the knife all the way to the bottom of the corn (the sides of the bowl get in the way). Doing it over a cookie sheet is faster and the sides of the cookie sheet keep the kernels from flying away.

Next, combine corn, cream cheese, cheddar cheese and bacon in a mixing bowl.

Toss in the jalapenos and mix until all ingredients are well blended.

Put corn and cream cheese mixture in an oven safe bowl.

Bake for 20 minutes and your hot corn dip is ready to serve.

This corn dip with cream cheese was so good that it didn’t last very long! Everyone raved about it and it’s such an easy appetizer recipe that you can make it for every gathering. Trust me, when you see how much everyone loves this, it’ll become your new go-to party dip!

Watermelon Fruit Bowl

Since watermelon is in season too, a watermelon fruit bowl would be perfect for the party too. It’s so much so much prettier than an ordinary bowl and can be filled with other fruits like strawberries and blueberries (also in season).

Just cut your watermelon lengthwise and save one half for scooping out melon balls. That half will also be the bowl. Use the other half to make a separate plate of sliced watermelon.

Make watermelon balls with a melon scoop and keep going until the watermelon bowl is empty. All that’s left to do now is fill the bowl with watermelon, strawberries, blueberries and any other fruit you’d like to add. (I didn’t have time to make it for this party but these red, white and blue watermelon snacks are the best for summer parties).

Bell peppers and tomatoes are in season too and at the top of my list for my veggie plate. I love serving a veggie platter because they’re easy to throw together and make a colorful addition to any party spread. It doesn’t hurt that they taste great too! The only problem is that my girls try to eat all the bell peppers before the guests even arrive!

We needed a little something for dessert so I made my favorite No Bake Cheesecake Bites!  It’s another super easy recipe and takes just 20 minutes. Plus, you can use even more of those Fresh From Florida blueberries!

Now it was time for decor. Since we were going with a summer theme, I found plates, napkins and accessories with colorful summer fruits.

The party turned out awesome! We all had a blast and the food was a big hit, especially the hot corn dip. It disappeared fast!

Even my girls had a great time! They spent most of the time playing but still found time to snack. I think I figured out what happened to all the strawberries and blueberries from the fruit bowl…

We definitely need to do this more often! I love my new neighbors and I see lots of block parties in our future (with Fresh From Florida inspired party food, of course)!

Corn Dip Recipe

This delicious corn dip with cream cheese and bacon makes an amazing party dip for all your summer gatherings.

Ingredients
 

  • 2 ears Fresh From Florida sweet corn
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar
  • 1/2 cup bacon crumbles
  • 1 jalapeno chopped

Instructions

  • Preheat oven to 350
  • Cut the kernels off of two ears of Fresh From Florida sweet corn.
  • In a mixing bowl, combine corn, cream cheese, cheddar cheese, bacon and jalapenos.
  • Mix well, then place in an oven safe dish.
  • Bake for 20 minutes and serve hot out of the oven.

Are the 2 ears of corn raw or cooked when cut off the cob?

What temperature u put ur oven on?

Favorite dip of all time. Perfect. I double the recipe and we eat it all in one day.

Can you use frozen corn instead? Fresh corn hasn’t been good this year.
