This hot dip makes a great appetizer, but it’s so rich and creamy that it works as a side dish as well. The bonus? This recipe is made with just five simple ingredients and requires very little prep time.

Why You’ll Love This Recipe

  • Easy recipe: All you need are 5 simple ingredients and 10 minutes of prep time and this dip is ready for the oven.
  • Wonderful flavors: If you love corn, you’ll love the flavor in this dip. There is nothing quite like fresh and sweet summer corn.
  • Party favorite: Delicious and easy to make, this disappears fast at parties (so make sure to get some quick)!

Ingredients

The ingredients for a cheesy corn dip
  • Fresh corn
  • Cream cheese at room temperature
  • Shredded cheddar
  • Bacon crumbles
  • Fresh jalapeños – chopped

How to Make This Corn Dip Recipe with Cream Cheese

Step 1. First, cut the kernels off two ears of sweet corn.

Tip: When removing the kernels from the corn on the cob, doing it over a cookie sheet is faster, and the sides of the cookie sheet keep the kernels from flying away. If you use a bowl, it can be hard to get the knife all the way to the bottom of the corn because of the sides of the bowl.

Step 2. Next, combine corn, cream cheese, shredded cheese, and bacon in a mixing bowl. Toss in the fresh jalapenos and mix until all ingredients are well blended.

Step 3. Place the corn and cream cheese mixture in an oven-safe bowl.

Step 4. Bake for 20 minutes or until the cheese is melted and the dip is bubbly hot. Serve with tortilla chips, corn chips, or crackers.

Tip: If you’re serving this at a party and need to keep it warm, you can also cook and serve this hot corn dip in a small slow cooker.

Variations

  • Mexican corn dip: Give this recipe a Mexican flair by adding a 4 ounce can of green chilies. You could add a can of drained, diced tomatoes that have green chilies instead.
  • Cheese choices: We used cheddar, but you can try this recipe with any of your favorite types of melty cheeses. Monterey Jack cheese, Pepper Jack, or sharp cheddar cheese are popular choices.
  • Seasoning and herb options: Add other flavors with a little garlic powder, onion powder, chili powder, or smoked paprika. Fresh cilantro goes really well with the creaminess of the cheese and the crunchiness of the corn.
  • Grilled corn: To make this recipe similar to Mexican street corn dip, you can use grilled corn instead. Place the cobs on the grill until slightly charred, then just add the corn kernels to the rest of the ingredients. Top your delicious dip with some cotija cheese.

Other Delicious Ways to Serve Cheesy Corn Dip

Of course, you can never go wrong serving this corn dip with Fritos or other chips, but it would also be delicious served in these unique ways:

  • Stuffed mushrooms: Fill mushroom caps with the corn dip, then bake warm and bubbly.
  • Quesadilla filling: Spread the corn dip between tortillas with some extra cheese. Fry in a skillet on both sides for a delicious twist on classic quesadillas.
  • Baked potatoes: Spoon the dip onto culled-out baked potatoes, top with more cheese, and melt in the oven. Top with sour cream and chopped green onions.
  • Omelet filling: Add a spoonful of the dip into your morning omelet.
  • Stuffed peppers: For a hearty and flavorful side dish, fill bell peppers with the corn dip, then bake until the peppers are tender.
  • Creamy corn pasta: Mix some of this corn dip into cooked pasta for a quick and easy meal. You may have to thin it out a little with pasta water.
  • Bread bowl: For another delicious appetizer, cook the corn dip with cream cheese, then add it to a culled-out bread bowl instead of a serving bowl. Serve it with pieces of extra bread and some chips on the side.

Corn Dip FAQs

Do I have to use fresh corn off the cob?

If you can’t find fresh summer corn, you can always use canned corn or frozen corn kernels.

If using frozen corn on the cob or just the kernels, you’ll want to thaw them before adding them to the other ingredients. You’ll also want to pat the kernels with a paper towel before adding them to the cheese mixture. This will help soak up any extra moisture.

Can this be served as a cold dip?

While this creamy corn dip is typically served hot, you can certainly enjoy it cold. The cream cheese will firm up the texture. Just use a cheese knife to help you spread it on crackers or chips.

Can I make it ahead of time?

Sure! You can make the dip the night before by just mixing the ingredients together and storing it in the fridge. Spoon the dip into an oven-proof baking dish, and bake when you’re ready to serve it.

Favorite dip of all time. Perfect. I double the recipe and we eat it all in one day.

Can you use frozen corn instead? Fresh corn hasn’t been good this year.
