  • Unsalted butter, softened to room temperature (use salted butter if that’s what you have on hand)
  • Powdered sugar
  • Vanilla extract
  • Dark chocolate melting wafers

How to Make Peanut Butter Chocolate Truffles

Step 1. Line baking sheet with parchment paper and set it aside.

Step 2. In a large bowl, use a hand mixer to beat the butter and peanut butter together until smooth and well blended.

Step 3. Add the vanilla extract and powdered sugar a little at a time. Beat together until well combined.

Step 4. The filling will be soft so place the bowl in the refrigerator to chill for 20 minutes to firm it up.

Step 5. Once the mixture has chilled, use a 1 ½” cookie scoop to scoop up the filling. Roll into balls using the palms of your hands and place on a parchment-lined baking tray.

Step 6. Repeat with the rest of the mixture until it’s all rolled into small balls.

Step 7. Place the truffles into the refrigerator to chill for an additional 20 minutes.

Tip: The peanut butter balls soften quickly when you roll the balls in your hands so it’s important to chill it again before dipping in the melted chocolate.

Step 8. Prepare a double boiler over low heat to melt the chocolate melting wafers. Stir occasionally until fully melted and smooth. .

Note: You can also melt the melting wafers in a microwave safe bowl. Microwave on a low or defrost setting,s tirring in 30 second intervals, until melted and smooth.

Step 9. Use a small fork or chocolate dipping tool to dip each of the chilled peanut butter balls one at a time into the melted wafers.

Step 10. Lift the ball out using the fork and tap it against the side so to allow excess chocolate to drip off.

Step 11. Set the coated balls back onto the prepared baking tray. Place the tray back into the refrigerator so the chocolate shell will firm up.

For The Peanut Butter Topping

Step 1. Using a double boiler, melt the white chocolate wafers and peanut butter together over low heat. Stir occasionally until fully melted and smooth.

Step 2. Add the mixture to a piping bag and snip off the very end of the tip.

Step 3. Remove the tray from the refrigerator and drizzle the melted peanut butter mixture over the top of the truffles.

Note: If you want to save time and skip the piping bag, you can just use a fork to drizzle over the coated balls.

How Do I Store No-Bake Peanut Butter Balls

Fridge: Truffles can be kept refrigerated in an airtight container for up to 2 weeks.

Freezer: You can also freeze them in a freezer safe airtight container for up to 3 months. To freeze the peanut butter balls, first make sure you let the chocolate set completely. Then transfer them to a freezer safe container. For best results place a sheet of parchment paper between the layers.

  • Chocolate options: This recipe calls for dark chocolate but feel free to use milk chocolate chips.
  • Peanut butter: You can add a nutty crunch to your truffles by swapping out the smooth peanut butter with crunchy peanut butter.
  • Crispy truffles: Gently fold ½ cup Rice Krispies cereal into the creamy peanut butter filling before chilling. They give the truffles a delicious crispy texture.  
  • Chopped nuts: Other great ways you can add a little crunch is to add chops pecans, walnuts or almonds.

Can I add other flavors to the peanut butter mixture?

Absolutely! You can add vanilla extract, almond extract, or even a dash of cinnamon to change up the flavors of the truffles.

How do I get an extra thick chocolate shell?

If you want the coating to be extra thick, just simply dip the balls into the melted dark chocolate a second time.

Can I use almond butter instead?

You sure can. The texture of almond butter is a bit thicker than so you’ll want to add just a little bit less or add just a bit more butter to make it creamy.

Do I use salted peanut butter?

We just use regular peanut butter that has a little salt added to it. It works great to balance out the sweetness. If you’re using an all natural style peanut butter, you may want to add a small pinch to the filling.

Tips and Tricks

  • These can be sticky to roll so make sure to chill them long enough for them to firm up. They’ll be easier to handle but you should still work quickly.
  • If the filling seems too loose, you can mix in an extra ½-¾ cup of powdered sugar. Keep in mind that it will make it much sweeter. Another way to firm up the filling is to sprinkle in super fine graham cracker crumbs.
  • If you can’t find melting wafers, you can use almond bark. You can also use chips, though you may have to add a teaspoon or so of coconut oil. The oil thins out the chocolate and makes it more dippable.
  • Keep an eye on the chocolate as it’s melting so you don’t overheat it. Always melt over low heat to prevent the chocolate from seizing up.

For The Peanut Butter Truffles

    1 cup creamy peanut butter, 8 tablespoons unsalted butter
  • Add the vanilla extract and powdered sugar a little at a time. Beat together until well combined. The peanut butter filling will be soft so place the bowl in the refrigerator to chill for 20 minutes to firm it up.
    1 teaspoon vanilla extract, 2 cups powdered sugar
  • Once the mixture has chilled, use a 1 ½” cookie scoop to scoop up the filling. Roll the balls individually in the palms of your hands and place on a parchment-lined baking tray.
  • Repeat with the rest of the peanut butter mixture until it’s all rolled into small balls.
  • Place the truffles into the refrigerator to chill for an additional 20 minutes.
  • Prepare a double boiler over low heat to melt the chocolate melting wafers. Stir occasionally until fully melted and smooth. .

  • Using a double boiler, melt the white chocolate wafers and peanut butter together over low heat. Stir occasionally until fully melted and smooth.
    ½ cup Ghirardelli vanilla melting wafers, 3 tablespoons creamy peanut butter
  • Add the mixture to a piping bag and snip off the very end of the tip.
  • Remove the tray of peanut butter balls from the refrigerator. Drizzle the melted peanut butter mixture over the top of each one.
  • Note: If you don’t want to save time and skip the piping bag, you can just use a fork to drizzle over the coated balls.
  • Keep refrigerated until ready to eat. Enjoy

Notes

  • The peanut butter filling will be soft after you mix all the ingredients and also after rolling the balls between your hands. Don’t skip chilling them in between or they will be much harder to work with.
  • We like to use our double boiler but you can also melt the melting wafers in a microwave safe bowl. Just microwave on a low or defrost setting, stirring in 30 second intervals until melted and smooth.
