Quick & Easy Blue Cheese Vinaigrette

Who has time to cook dinner from scratch every night?  My go-to dinner on busy nights is this pizza & salad with a deliciously easy blue cheese vinaigrette.

Before you have kids, you totally underestimate how busy your life is going to become.  Then a baby comes along and think you’ll have free time again once they’re out of the baby stage.  Then you have a toddler and you just know that it’ll be different once you don’t have to chase them around 24/7.

Well, I hate to break it to those moms that haven’t discovered this yet but the older they get, the more you’re on the go.  We have after school activities three days a week, homework, school projects (we’re building a medieval castle this week), birthday parties to go to…the list goes on and on.  That doesn’t even count all the normal everyday errands like grocery shopping.  Basically, once you’re a mom, you are always on the go.  Not that being a mom isn’t the best thing ever, because it definitely is.  Plus, the older they get, the more fun they are!  Just don’t ask me the last time I read a book…or even a magazine from cover to cover for that matter.

This is why I have to improvise dinner sometimes a lot.  When my oldest gets home from her Wednesday class at 7:15, I don’t have time (or the energy) to cook an entire meal from scratch.  Our easy go-to dinner is always pizza.  The girls love it and I love how simple it is…pop it in the oven and less than 20 minutes later, dinner is ready.  If you are a regular reader, you already know that I’m a big believer in having a freezer stocked full of emergency pizza.

Not all pizza is created equal though.  We love Freschetta Naturally Rising Pizza because it has ingredients that set it apart from other frozen pizza brands.  It contains the perfect blend of three grains that are kneaded and rolled for dough that rises naturally (I’m still not sure if the pizza or the crust is my favorite part!).  Plus, the sauce is made from vine ripened tomatoes and it’s topped with 100% real provolone and mozzarella cheeses.  It’s freshness you can taste and my girls always get excited when they see me popping one of these in the oven!  All the flavors are delicious but the Freschetta Naturally Rising 4-Cheese Pizza is definitely a favorite in my house.

It’s a little crazy how often we’re in Walmart lately so I usually pick up a few when we go in.  They’re pretty easy to find in the frozen pizza aisle and even better, you can use this ibotta offer to save some money on your next trip.

Of course, I like to add some fruit or veggies on the side too and lucky for me, my girls like salad as much as I do.  Last time I had all the ingredients on hand to whip up a simple salad of mixed greens, cherry tomatoes, cucumber, red onions,  and craisins with a little blue cheese sprinkled over it.  We usually just pour a little oil and vinegar on top but since I had extra blue cheese on hand, I thought I’d try something new this time.

Earlier this summer I made a homemade raspberry vinaigrette and loved the way it turned out.  This time I wanted to try a blue cheese vinaigrette but it had to be easy because the pizza was almost ready.  With just four ingredients, this definitely counts as easy!

I started by pouring 3/4 cup of olive oil in the blender.

Next, I added the balsamic vinegar.

Finally, I added the blue cheese and minced garlic, blended for a few seconds and our Blue Cheese Vinaigrette was ready.

Pizza and salad are served…yumm!

I’m pretty sure I could eat Freschetta pizza and salad every night and not get tired of it!

Blue Cheese Vinaigrette

Top your salad with this deliciously easy Blue Cheese Vinaigrette

Ingredients
 

  • 3/4 cup olive oil
  • 3 tbsp balsamic vinegar
  • 1/2 cup blue cheese
  • 1/4 tsp. minced garlic

Instructions

  • Mix olive oil and vinegar in blender
  • Add blue cheese and garlic
  • Blend until the blue cheese is no longer chunky. You should only be able to see very small pieces.
  • Top your salad and enjoy
