Want a delicious Halloween treat? These Candy Corn Surprise Cupcakes are the perfect dessert for your next Halloween party!

 

Do you guys like candy corn as much as I do?  I become a little obsessed with it this time of year and now I’ve even been thinking of how I could incorporate them into recipes.  Earlier this year I made these Rainbow Surprise Cupcakes and it hit me that I could do the same thing with candy corn.  These candy corn cupcakes were pretty easy too (well, except for the icing but we’ll get to that later).

Starting with a box of white cake mix,  I prepared the batter and divided it equally among three bowls.   I added yellow food coloring to the first bowl, orange to the second and I kept the third one white.

I put a large spoonful of each in the cupcake wrappers and threw them in the oven.

Once they were finished cooking, I let them cool a bit and got out my handy dandy cupcake corer.

You have to be sure not to push the corer all the way to the bottom or the filling will fall out as soon as someone picks up the cupcake.

I like to stuff it as full as I can…you can never have too much candy corn, right?

You won’t be able to fit the entire “plug” back in the hole so I suggest doing what I did…fill the holes with the white part and make a mini-snack from the leftovers.

Now it was time for the frosting!  I bought this Wilton Color Swirl Decorating Set because I loved the way it blended the icing colors.  I filled the bags with orange, yellow and white and in my head the cupcakes would look just as pretty, if not prettier, as the ones on the box.  Well, it definitely didn’t work out that way!  My first go around was a complete disaster.  I had a lot of trouble getting the coupler attached right and once I did start icing the cupcakes, they looked NOTHING like the box.  Not only did the icing start seeping out the sides but the colors didn’t look even.  There is definitely a learning curve to this!  Luckily I figured it out (mostly) in the end.

I love making these “surprise” cupcakes!  They’re so much fun and would be the perfect treat for your Halloween Bash or school function.  They’re pretty delicious too!
