Fall is here and that means it’s time for pumpkin spice, football, and all our favorite comfort foods! From soup to crock pot meals, there are so many to choose from, but meatloaf is always one of our favorites.

While we love classic meatloaf recipes, adding bacon has taken our meatloaf to a whole new level! I mean, bacon makes everything better, right? Serve it with this Traeger smoked mac and cheese or air fryer potato wedges and you’ve got a meal your family will absolutely love!

Not only is this recipe delicious, it makes weeknight dinners super easy. In fact, sometimes I’ll go ahead and make it in the morning so I can just pop it in the oven at dinnertime. That way I can relax and enjoy my coffee knowing that I’ll have one less thing to do that day.

  • Ground beef – We made this recipe with ground beef, but for a healthier meatloaf, try ground turkey instead. You can’t go wrong either way!
  • Lipton Recipe Secrets Mix (Onion) – This is my secret ingredient and adds so much flavor to this meatloaf recipe.
  • Greenfield Bacon – Bacon makes everything better and this meatloaf is no exception! I chose Greenfield because of the fact that they don’t add antibiotics or artificial ingredients.
  • Onions – In addition to the onion mix, I like to add fresh onions too. We like ours chunky but if you have picky kids, you can dice it into smaller pieces so that they don’t notice.
  • Breadcrumbs & Eggs – Breadcrumbs and eggs hold your meatloaf together and give it volume. If you don’t have breadcrumbs, you can try adding an extra egg instead.
  • Milk – Adding milk to your ingredients helps to make sure you end up with a juicy meatloaf.
  • Glaze – The ketchup and brown sugar glaze is the perfect way to finish off this recipe. Brown sugar adds a little touch of sweetness to this savory recipe.

How to make Bacon Wrapped Meatloaf

Step 1: Preheat oven to 350 degrees

Step 2: In a large bowl, combine ground beef, Lipton Recipe Secrets Mix, onions, breadcrumbs, egg, milk, ketchup, and mustard.

Step 3: Use your hands to mix the ingredients. Be sure the ground beef mixture is completely blended.

Step 4: Lay five slices of bacon across the meatloaf pan. The ends of the bacon should hang over the sides.

Step 5: Add the meat mixture to pan, then fold bacon across the top.

Step 6:  In a small bowl, combine ketchup and brown sugar. Brush the sweet glaze over the top of the bacon.

Step 7: Place meatloaf into the oven and bake for one hour (internal temperature should be 160 degrees Fahrenheit).

Let the meatloaf rest for about 10 minutes before serving. If you have leftovers, you can store them in the refrigerator in an airtight container for up to three days.

This is my family’s new favorite meatloaf recipe, and everyone wanted seconds! My secret ingredient really did the trick…this recipe is SO full of flavor!

I’m definitely going to have to stock up on Greenfield Bacon and Lipton Recipe Secrets because this easy recipe is now part of our regular dinner rotation.

Can you freeze meatloaf?

Yes, you can totally freeze this delicious bacon meatloaf for an easy dinner down the road! Once it’s cool, cut the remaining meatloaf into individual slices. This makes it easy to grab just a serving or two once it’s fully frozen.

Wrap each slice in aluminum foil or plastic wrap, then place them in a gallon size freezer bag. Freeze for up to three months. When you’re ready to eat, just place a slice on a microwave safe plate and microwave until cooked through.

What to do with leftover meatloaf

Trying to figure out what to do with that leftover meatloaf? Here are a few suggestions:

  • Make a meatloaf sandwich
  • Serve over spaghetti
  • Add it to your chili
  • Make stuffed peppers

What to serve with meatloaf?

The great thing about meatloaf is that there are so many sides that go with it. Try serving it with any of these:

Bacon Wrapped Meatloaf Recipe

Ingredients
 

  • 1 1/2 pounds ground beef
  • 1 package Lipton Recipe Secrets Mix Onion Flavor
  • 2/3 cups breadcrumbs
  • 1/2 small onion
  • 1 1/2 tablespoons brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 egg
  • 1/2 cup milk
  • 5 slices Greenfield bacon

Meatloaf Glaze

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar

Instructions

  • Preheat oven to 350 degrees
  • Combine ground beef, Lipton Recipe Secrets Mix, breadcrumbs, onions, brown sugar, ketchup, mustard, egg and milk in a large mixing bowl. Use your hands to mix until well blended.
    1 1/2 pounds ground beef, 1 package Lipton Recipe Secrets Mix, 2/3 cups breadcrumbs, 1/2 small onion, 1 1/2 tablespoons brown sugar, 1/4 cup ketchup, 1 tablespoon prepared mustard, 1 egg, 1/2 cup milk
  • Lay five bacon slices across the meatloaf pan. The ends of the bacon should drape over the sides of the pan.
    5 slices Greenfield bacon
  • Place meatloaf mixture in pan and fold the ends of the bacon over the top.
  • Combine ketchup and brown sugar for the glaze, then brush over top of the bacon.
    1/4 cup ketchup, 1 tablespoon brown sugar
  • Cook 45-50 minutes. The meat thermometer should read 160 degrees.
  • Let sit 5-10 minutes and serve. Enjoy!

Notes

  • For a healthier version, try using lean ground beef or ground turkey.
  • If you don’t have breadcrumbs, add an extra egg instead.
  • Want to change up the flavor a little? Instead of the ketchup glaze, brush with 1/4 cup BBQ sauce instead.
