- Cream cheese-The key ingredient in any cheesecake recipe. You’ll want to use full fat cream cheese for this recipe
- Granulated sugar-Sweetens the cream cheese filling.
- Eggs-Thickens the filling and gives it a fluffy texture
- Vanilla extract-Adds flavor
- Marshmallow fluff-This is the secret ingredient in these dessert bars. It not only sweetens the filling, but it also makes it rich and decadent and creamy
How To Make Oreo Cheesecake Bars
Step 1: Preheat the oven to 350 degrees Fahrenheit.
Step 2: Place Oreo cookies, filling and all, in a food processor. Pulse until they’re broken down into a crumb-like texture. You’ll need about 24 whole Oreo cookies to make two cups. (Note: If you want to skip this step, you can buy Oreo Baking Crumbs instead)
Step 3: To make the Oreo cookie crust, mix cookie crumbs and melted butter until the butter is evenly distributed and all of the cookie crumbs are coated. The crumbs will appear wet.
Step 4: Pour the Oreo crust mixture into a prepared 9×9 pan. You can use butter, cooking spray, or parchment paper to keep the bars from sticking to the baking pan.
Step 5: Press the crust mixture into the bottom of the pan so that the entire area is covered and the mixture is evenly distributed. Using a spoon, press down on the crushed Oreos to ensure that the crumbs are tightly packed.
Step 6: Bake for 8 minutes at 350 degrees.
Step 7: Remove the crust from the oven and set it aside, leaving the oven set at 350 degrees.
Step 8: Begin preparing the filling by putting the cream cheese and sugar in a large bowl. Beat on medium speed with an electric mixer until the mixture is smooth and creamy.
Step 9: Mix in the eggs and vanilla extract.
Step 10: Once the cream cheese mixture is well combined, mix in the marshmallow fluff.
Step 11: Chop the remaining Oreo cookies and fold into the cheesecake batter. Mix until well incorporated.
Step 12: Pour the batter over the crust, using a flexible spatula to scrape the bowl and spread the cheesecake layer evenly.
Step 13: Bake for 20 minutes. Then, without opening the oven, reduce the heat to 200 degrees and bake for an additional 30 minutes.
Step 14: Once the baking is complete, turn the oven off but leave the cheesecake inside for an additional 10 minutes.
Step 15: Remove the cheesecake from the oven and allow to cool, then cut into squares.
Tips & Tricks for the Best Oreo Dessert Bars
- This cheesecake bar recipe works best with full-fat cream cheese. The low fat and nonfat varieties just don’t taste quite as good or yield the same rich, creamy cheesecake filling.
- To make your bars easier to remove from the baking pan, line the pan with parchment paper before you begin, leaving a 2-inch overhang on each side.
- For a fun finishing touch, try topping each bar with a mini Oreo cookie. Stand the cookie on its side and press gently into the top of the bar to hold it in place. If you have any remaining Oreos after making your crust and filling, you can also use the full size cookies here, but the mini version looks especially cute.
- If you prefer your cheesecake bars without chocolate, you can omit the Oreos (or use the golden variety) and substitute graham cracker crumbs for the crust.
