Ingredients
- 1 box chocolate cake mix + ingredients from the back (water, oil, eggs)
- 4 cups powdered sugar
- 1 cup butter, softened (unsalted)
- 2 tsp. vanilla extract
- 2 tbsp. milk
- orange and red gel food coloring
- 1 bag pretzel sticks
- 24 mini marshmallows
- Note: You’ll need piping bags, tips, and plastic wrap to decorate these cupcakes.
How to Make Campfire Cupcakes
Step 1: Heat oven to 350 degrees. Line 2 cupcake pans with cupcake liners and set aside.
Step 2: In a large bowl (or the bowl of a stand mixer), prepare the chocolate cake batter according to the package directions. Bake the cupcakes as instructed on the box, then allow them to cool completely to room temperature.
Step 3: In a large bowl, beat the softened butter until it’s light and creamy.
Step 4: Add powdered sugar to the butter. Beat the butter and sugar with an electric mixer until they’re well combined.
Step 5: Add vanilla and milk, and then mix on medium speed until frosting comes together and is smooth.
Step 6: Divide buttercream frosting, putting half in one mixing bowl and half in another. Add several drops of orange food coloring to one of the bowls.
Step 7: Add several drops of red food coloring to the other bowl. Mix both colors of frosting until food coloring is combined and there are no streaks.
Step 8: Add small dollops of frosting to the center of each cupcake.
Step 9: Break the pretzel sticks in half to create 6 “wood” pieces that will sit under your frosting. Press the pretzels onto center of the cupcake, using the dab of frosting to hold them in place.
Step 10: To make the dual-colored icing, take two large sheets of plastic wrap and add 3-4 big spoonfuls of orange frosting to the wrap. Next, fold the edges over to make a tube of icing and twist the ends.
Repeat this for the red frosting and set aside. Snip off one end of the twisted plastic wrap for each color.
Step 11: Add both colors side by side to a large piping bag prepared with your favorite frosting tip (I like to use the large star tip). The trimmed off end should be pointing down towards the frosting tip.
Squeeze the colors evenly and swirl the frosting onto the cupcakes using a circular motion. The dual colors will give your cupcakes the fire effect.
Step 12: For the topping, take 24 pretzel sticks, trimmed about ¾, and push a miniature marshmallow on the end of each.
Step 13: Add the “toasting marshmallow” to the top of the cupcakes and enjoy!
Tips & Tricks
- You can buy any brand of cake mix you like for these fun campfire cupcakes but be sure to prepare them according to the package directions. Since the different brands may vary slightly, you may need to adjust your ingredients and amounts accordingly.
- Create an extra fun surprise by adding marshmallow cream to these cupcakes. It would taste great with the chocolate cake and go perfectly with the campfire theme. After your cupcakes have cooled completely, use a cupcake corer to cut a small circle out of the top of the cupcake. Then fill the hole with marshmallow fluff and replace the circle, frosting cupcakes as directed.
