Pumpkin Whoopie Pies

These easy pumpkin whoopie pies with a delicious cream center make the perfect fall treat!


Butter Brown sugar, Eggs  Vanilla extract Flour Oatmeal Baking powder Baking soda Cornstarch Pumpkin pie spice Nutmeg, Cinnamon, Ginger Canned pumpkin Marshmallow fluff  Confectioners' sugar

Step 1

Mix the flour, oatmeal, baking powder, baking soda, cornstarch and the dry spices in a large bowl.

Step 2

In a large mixing bowl, combine the butter and brown sugar and mix until smooth and creamy.

Step 3

Add large eggs and  a teaspoon of vanilla extract and mix until thoroughly combined.

Step 4

Add the flour mixture and canned pumpkin into the wet ingredients and mix well.

Step 5

Once all the ingredients have been mixed thoroughly combined, you’re ready to bake.

Step 6

Drop dough two inches apart on the baking sheet. Flatten slightly using the bottom of a drinking glass.

Step 7

Bake on the center rack for 10-12 minutes. Remove from oven & let cool for 5 minutes.

Step 8

To make the filling, start by whipping marshmallow creme and butter until fluffy.

Step 9

Add vanilla and powdered sugar, whipping until thoroughly mixed. Chill until firm (about one hour).

Step 10

Place a large dollop of filling on half of the cookies, then top with the remaining pumpkin cookies.
