Chocolate Chip Cookie S’mores Cups

Summer is almost here and you know what that means.  It’s time for s’mores!!!  S’mores are good all year round but for some reason, s’mores and summer just go together like peanut butter & jelly, wine & cheese, me & shoes…you get the idea!  While s’mores are best enjoyed while sitting around the campfire, we certainly don’t want to limit ourselves.  That’s why I really love this cool little baking mold that stumbled upon last week!  I knew I had to have it as soon as a saw it and it took me all of two seconds to come up with this idea for Chocolate Chip Cookie Smores!

I was actually shopping for something else when I came across this fun “shot glass” maker!  I’ve always been a fan of mini-desserts and thought it would be really fun to experiment with it. You really could use this for a million different recipes!

If you’re making Chocolate Chip Cookie S’mores, the first thing you’ll need is chocolate chip cookie dough, right?  I took the easy way out and just used the recipe from a chocolate chip bag (a 12 ounce bag will make 16 cookie cups).  When you’re filling the cups with cookie dough, be sure to push it as far down into the cups as you can.  You don’t want air pockets or your cookies may break apart when you try to remove them from the mold.

Bake at 375 for 25-30 minutes and let the cookie cups cool to room temperature.  Cut the top of the cups (which is actually the bottom) even with the mold so that they will stand upright.  You’re probably craving cookies anyway because the smell of fresh baked cookies has taken over your house…take those pieces you just cut and have a yummy little snack!  Leave the cookie cups in the mold and place in the refrigerator until completely cooled. Now comes the fun part…remove them from the mold.  Take your time with this part because if you rush, your cookies may crumble!

Next, get your melted chocolate ready.  I chose to melt dark chocolate chips since I used regular semi-sweet chocolate for the cookie cups.  Aren’t two chocolates always better than one?  I melted it in a bowl, then cut the corner off a sandwich bag for drizzling (though you can always just drizzle it the old fashioned way with a spoon).  Add layers of broken graham cracker pieces and mini marshmallows, drizzling chocolate over them as you go.  Finally, top them with mini-marshmallows and use a creme brulee torch to toast them to a golden brown.  (Of course, I didn’t realize until this point that mine was out of fuel so I improvised with a long fireplace lighter…not at all the same but it worked in a pinch).  Drizzle a bit more chocolate over the top and your Chocolate Chip Cookie S’mores are ready to go!

These S’more treats look like lots of fun to make. They are a very different idea. I bet they would be a huge hit at a summer BBQ. I think I’ll pin them for later.

This mold is so fun! I want to get one so I can make these. Awhile back I tried making s’mores with cookies instead of graham crackers and it is amazing! This uses the same concept but in super cute form. Love it!
