Decadent S’mores Brownie Recipe

If you love s’mores but don’t love building a fire, these s’mores brownies are for you. A rich brownie base is layered with graham cracker crumbs, melty chocolate, and a gooey marshmallow topping that gets lightly toasted in the oven. Every bite has that classic s’mores flavor, but in brownie form.

What I love most about this recipe is how easy it is. Using a boxed brownie mix keeps things so simple. The brownies bake up fudgy and chocolatey, with a surprise layer of melted chocolate hiding inside and marshmallows on top that look straight out of a campfire treat.

These brownies are perfect for parties, bake sales, sleepovers, or anytime you want a dessert that feels nostalgic but still totally crowd-pleasing.

How To Make S’mores Brownies

Step 1. Preheat the oven according to the brownie mix package directions, then line a 9×9-inch baking pan with parchment paper.

Step 2. In the bowl of a stand mixer or a large mixing bowl, combine the brownie mix, eggs, oil, and water. Mix on low speed until well blended. Your batter should be smooth and creamy.

Step 3. Pour about ¾ of the brownie batter into the prepared pan and spread it into an even layer.

Step 4. Sprinkle the graham cracker crumbs evenly over the brownie batter.

Step 5. Arrange the chocolate bars in a single layer on top of the graham cracker crumbs. Spoon and spread the remaining brownie batter evenly over the chocolate, then bake according to the package directions.

Step 6. Remove the brownies from the oven and immediately arrange the marshmallows on top. Return the pan to the oven under the broiler for 1–2 minutes, watching closely, until the marshmallows are melted and lightly toasted.

Step 7. Remove from the oven and transfer to a wire rack to cool completely. Once cooled, cut into 3×2-inch squares and enjoy!

Store brownies in an airtight container at room temperature for up to 3 days.

Variations

  • Chocolate Chips: Swap the chocolate bars for milk chocolate chips sprinkled over the graham crackers.
  • Dark Chocolate: Use dark chocolate bars for a richer flavor.
  • Mini Marshmallows: Great for even coverage if you don’t have large marshmallows.
  • Extra Graham Flavor: Add a thin graham cracker crust layer to the bottom before the brownie batter.
  • Peanut Butter Twist: Add peanut butter chips along with the chocolate layer.

Tips & Tricks

  • Line The Pan: Parchment paper makes removal and slicing much easier.
  • Add Marshmallows Last: Always add marshmallows after baking to keep them soft and gooey.
  • Watch The Broiler Closely: Marshmallows brown fast so don’t walk away.
  • Clean Slices: Let brownies cool completely and wipe the knife between cuts to get cleaner slices.
  • Uniform Look: Square marshmallows give the brownies a classic s’mores appearance, but regular ones work just as well too.
