How to Make Easy Lazy Day Cake

Pre heat oven to 350 degrees and grease an 8×8 baking dish.

Step 1: Combine flour and baking powder in a medium bowl or beater bowl of a stand mixer.

Step 2: Use a hand or stand mixer to cream the 1/4 cup butter and the 2/3 cup sugar until smooth.

Step 3: Add egg, vanilla and milk to the creamed mixture. Beat together on low speed until combined.

Step 4: Add flour mixture to wet ingredients a little at a time and mix well. Pour batter mixture into prepared pan.

Step 5: Bake at 350 for 25-30 minutes. Cake is done when a toothpick inserted into the middle comes out clean and the top is slightly golden brown. Allow it to cool in the cake pan on a wire rack for at least 10 minutes before slicing.

How Should I Store This Cake?

Because this cake isn’t frosted, you can store it in an airtight container right on your countertop. If you store it in the fridge, it may stay fresh a day or two longer, but this cake is so delicious, it never lasts longer than a couple of days anyway!

This is also the easiest cake to freeze, making it an awesome make ahead recipe. For best results, remove the cake from the cake pan and let it cool completely on a wire rack. Wrap it well with plastic wrap then slip it back into the cake pan to help give it some stability. Wrapped the covered dish with foil and date it. It should be fresh for several months.

Can I Make Cupcakes with This Recipe?

You sure can! Add the batter to silicone cupcake liners and bake them on 350 for 11-13 minutes or until a toothpick comes out clean when inserted in the middle.

Variations and Add-ins

Spice cake: During the cooler months, you can easily make this a spice cake by adding a teaspoon cinnamon and a teaspoon nutmeg to the batter.

Coffee cake: If you want a super easy coffee cake, mix 1/2 cup of chopped pecans, about a teaspoon of cinnamon and 1/2 cup brown sugar in a small bowl. Stir until combined. Then just layer half the batter in your baking dish. Add the brown sugar mixture, followed with the rest of the batter. When the cake bakes, it will have this warm cinnamon and brown sugar center that goes great with a hot cup of coffee!

Toppings: If you’re wanted to add a little something extra to the top of the cake, you can add a dollop of whip cream with fresh berries. Have fun and experiment with different topping ingredients. If you like a hint of chocolate, add a little cocoa powder in with the powdered sugar.

Frosting: This is a delicate cake so if you choose to add a frosting, stick with a whipped butter cream or a thin layer of cream cheese frosting. Thick or heavy frostings, like fudge frosting, are just too heavy and will weight down the cake too much.

Tips for Making the Best Lazy Day Cake Recipe

  • Always start with room temperature eggs. This is because egg yolks will break easier at room temperature than when they are cold. This helps them mix with the egg whites and other ingredients.
  • Don’t always trust the time on a recipe. Ovens bake differently so it’s always best to test your cake by inserting a long toothpick in center of the cake to be sure it’s done.
  • Allow time for your butter to reach complete room temperature and soften up before making the cake. This ensures it mixes well with the other ingredients. 
  • If your cake pan has the tendency to stick, you may want to line the bottom of it with a little parchment paper, then grease the top of the paper. If it looks like the cake is sticking around the edges, take a sharp kitchen knife and just run it along the edges to loosen it up.
