Let’s face it, sometimes life just gets too busy for us to spend an hour (or more) in the kitchen preparing a fancy meal! I don’t know about you, but I’m always driving my kids around to piano class and other after school activities, not to mention all the errands we run in the course of a week. While I do like cooking for my family, sometimes a home cooked meal from scratch just isn’t practical…unless we want to eat dinner at 9pm.
If you’re a regular reader, you already know that I always have two very important things on hand…emergency pizza and emergency wine. If you don’t have emergency pizza in your freezer, you need to get to the store right now! Seriously, it’s a life saver! My family loves Freschetta pizza and you’d better believe that our freezer is stocked. Not only do my kids get excited about an impromptu pizza night, I can feel good about serving it because I know it’s made from quality ingredients. We already love the Naturally Rising and Brick Oven pizzas but now Freschetta is introducing their new Artisan Crust pizzas with three whole grains in the crust.
If you shop at Publix between now and June 8th, you’ll be able pick up two of the new Freschetta Artisan Crust pizzas for just $10 (though the deal is good for all Freschetta pizzas). You’ll find Freschetta ® Artisan Four Cheese Pizza, Pepperoni Pizza, and Margherita Pizza but I already know that my favorite will be the Chicken and Fresh Roasted Vegetables. You may even want to get a few extras so that you can break open your freezer in case of “emergency” (you know, those days when you’re just way too exhausted to cook)!
When we’re having pizza, I also like to round out the meal with a healthy salad. One of our new favorites is this yummy Summer Berry Salad with spinach, berries and brie. Topped with a fresh raspberry vinaigrette, it’s the perfect compliment to our Freschetta pizza!
Go ahead and put your pizza in the oven and you can make your salad and dressing while it cooks. For the salad, toss together some baby spinach, blueberries, strawberries and brie…simple and delicious! Believe it or not, making your own raspberry vinaigrette is just as easy.
Start with fresh raspberries, of course…
…then add olive oil, balsamic vinegar, sugar, water and lemon juice.
Blend until creamy and voila, your vinaigrette is ready! You’ll find the full recipe card at the end of this post.
I think I can hear the oven beeping…pizza time!
- 2 cups fresh raspberries
- 2 tbsp olive oil
- 2½ tsp balsamic vinegar
- 2½ tbsp sugar
- 2 tbsp water
- ⅛ fresh lemon juice
- Add all ingredient to food processor
- Blend until smooth and creamy
- Serve over salad
