Homemade Strawberry Pie
This Easy Strawberry Pie is what summer desserts are all about; fresh berries, sweet glaze, and a buttery, flaky crust. I look forward to making this pie every year when strawberries are in season and at their sweetest. It’s so easy, even my kids like to pitch in, mostly so they can sneak a strawberry or two.
We keep it classic with real fruit and a simple homemade glaze with no gelatin or artificial stuff. The filling sets up beautifully in a flaky pre-baked crust and stays bright and fresh. Simply top it with a swirl of whipped cream, and you’ve got a dessert everyone gets excited about.

Why We Love This Recipe
- Made with fresh fruit: It’s made with fresh strawberries and a quick homemade glaze. No jello, no shortcuts, just real berry flavor.
- Perfect for summer: Served cold in a flaky crust, it’s the kind of dessert that hits the spot on hot days or summer nights.
- Quick and easy dessert: This fresh strawberry pie recipe takes just a few minutes on the stove and a quick chill in the fridge.
Ingredients

- Fresh strawberries: Use ripe, juicy strawberries that have been hulled and separated.
- Sugar: Just enough to sweeten the glaze.
- Water: This helps create a smooth base for the glaze.
- Cornstarch: Key for thickening the glaze so the pie sets up nicely.
- Pre-baked pie crust: You can use a store-bought crust or homemade, just make sure it’s fully baked and cooled.
- Whipped cream for topping: A big fluffy dollop takes this easy strawberry pie right over the top.
How To Make Fresh Strawberry Pie
Step 1. Start by mashing two cups of strawberries. If you really want to make it easy, just puree them in the blender or food processor.

Step 2. Mix the puree with the sugar and cornstarch and water. Bring to a boil in a saucepan. Boil 3-4 minutes, until your mixture thickens.

Step 3. Pour over the remaining strawberries and mix well.

Step 4. Spoon the pie filling into your pie crust and spread evenly. You can make your own homemade pie crust or buy one already made (which is what I did this time).

Step 5. Cover your strawberry pie and refrigerate at least two hours.

Step 6. Now you just need to add a little whipped cream and you have one of the best desserts ever!
Storage Instructions
Cover the pie loosely with plastic wrap and refrigerate for up to 3 days. I do not recommend freezing it. It changes the texture of the strawberries and makes the crust soggy.
Tips And Tricks
- Let the strawberry glaze cool for at least 15 minutes before mixing with the fresh strawberries so it doesn’t soften them too much.
- Chill the pie for at least two hours before slicing so the filling fully sets.
- Make sure the cornstarch fully dissolves in the water before heating to avoid lumps in the glaze.
- If your crust puffs up while baking, press it down gently with the back of a spoon while it’s still warm.

Variations
- Pie crust: Swap the regular pie crust for a graham cracker crust for a no-bake twist on this easy summer dessert.
- Cream cheese: Add a layer of sweetened cream cheese to the crust before adding the berries for cheesecake twist.
- Mini pies: Make mini strawberry pies in tart pans or muffin tins for individual desserts at summer parties.
- Blueberries: Add a few fresh blueberries on top for a patriotic dessert for summer holidays.
- Leftover ideas: Spoon leftover strawberry filling over pancakes, waffles, or cheesecake the next day. It’s so good.

FAQS
If your glaze stays runny, it probably didn’t boil long enough. Make sure it hits a full boil and thickens slightly before pulling it off the heat.
That usually happens when the strawberries are overripe or the glaze didn’t fully set. Chill it long enough before slicing, and use firm, fresh berries.
Frozen strawberries release too much liquid and make the filling watery. This pie really needs fresh strawberries to work.
Make sure the crust is fully cooled before adding the filling. You can also brush a little melted white chocolate or egg white on the inside before chilling.
