Homemade Strawberry Pie

This Easy Strawberry Pie is what summer desserts are all about; fresh berries, sweet glaze, and a buttery, flaky crust. I look forward to making this pie every year when strawberries are in season and at their sweetest. It’s so easy, even my kids like to pitch in, mostly so they can sneak a strawberry or two.

We keep it classic with real fruit and a simple homemade glaze with no gelatin or artificial stuff. The filling sets up beautifully in a flaky pre-baked crust and stays bright and fresh. Simply top it with a swirl of whipped cream, and you’ve got a dessert everyone gets excited about.

How To Make Fresh Strawberry Pie

Step 1. Start by mashing two cups of strawberries. If you really want to make it easy, just puree them in the blender or food processor.

Step 2. Mix the puree with the sugar and cornstarch and water. Bring to a boil in a saucepan. Boil 3-4 minutes, until your mixture thickens.

Step 3. Pour over the remaining strawberries and mix well.

Step 4. Spoon the pie filling into your pie crust and spread evenly. You can make your own homemade pie crust or buy one already made (which is what I did this time).

Step 5. Cover your strawberry pie and refrigerate at least two hours.

Step 6. Now you just need to add a little whipped cream and you have one of the best desserts ever!

Storage Instructions

Cover the pie loosely with plastic wrap and refrigerate for up to 3 days. I do not recommend freezing it. It changes the texture of the strawberries and makes the crust soggy.

Tips And Tricks

  • Let the strawberry glaze cool for at least 15 minutes before mixing with the fresh strawberries so it doesn’t soften them too much.
  • Chill the pie for at least two hours before slicing so the filling fully sets.
  • Make sure the cornstarch fully dissolves in the water before heating to avoid lumps in the glaze.
  • If your crust puffs up while baking, press it down gently with the back of a spoon while it’s still warm.

Why isn’t my glaze thickening?

If your glaze stays runny, it probably didn’t boil long enough. Make sure it hits a full boil and thickens slightly before pulling it off the heat.

Why does my pie get watery after a day?

That usually happens when the strawberries are overripe or the glaze didn’t fully set. Chill it long enough before slicing, and use firm, fresh berries.

Can I use frozen strawberries instead of fresh?

Frozen strawberries release too much liquid and make the filling watery. This pie really needs fresh strawberries to work.

How do I keep the crust from getting soggy?

Make sure the crust is fully cooled before adding the filling. You can also brush a little melted white chocolate or egg white on the inside before chilling.

  • 3/4 cup sugar
  • 3/4 cup water
  • 3 tablespoons corn starch
  • 1 pre-baked pie crust
  • Whipped cream for topping

Instructions

  • Mash or puree two cups of strawberries
    6 cups strawberries
  • Combine mashed/pureed strawberries, sugar, water and corn starch in a saucepan and bring to a boil
    3/4 cup sugar, 3/4 cup water, 3 tablespoons corn starch
  • Boil for 2-4 minutes, until the mixture thickens
  • Remove from stove and let cool for about 15 minutes
  • Pour over remaining strawberries and mix well
