Minion Marshmallow Pops Recipe

Ingredients

  • Candy eyeballs (I use some small and some large)
  • Candy sticks or paper straws
  • Small, microwave safe mixing bowls
  • Parchment paper
  • Disposable piping bag (no tip needed)

How To Make Despicable Me Marshmallow Pops

Step 1. Heat the blue chocolate melts at 50% power for 1 minute, in a microwave safe bowl.  Stir and continue to microwave at 50% power in 30 second increments until smooth and fully melted. This usually takes about 5 minutes.

Step 2. Dip the bottom third of the marshmallow into the blue candy.  Immediately push a stick or straw into the candy bottom, then harden for 4-5 minutes. 

Tip: You can stand these up in a glass or poke the stick into a piece of Styrofoam while they set. If using a straw, the styrofoam may be to firm to push it through. In that case, I’d push wooden skewers into the styrofoam, then put the straw over the top.

Step 3. In a second microwave safe bowl, microwave the yellow candy melts the same way you did for the blue ones.

Step 4. Using the straw as a handle, dip the bottom two-thirds of the marshmallow into the yellow chocolate, right up to the edge of the blue. Place it on a piece of parchment paper to harden and set.

Step 5. Once hardened, snip the tip of the black icing piping bag.  You want a very small opening so that you can be precise. 

Step 6. Gently use it to attach two candy eyeballs to some and one larger one to others.  Draw a black circle around the eyes. Use it to draw the straps of the goggles and a cute smile. Keep them still until everything has set, then enjoy!

Storage Instructions

You can store leftovers in an airtight container for up to 5 days. The coating really seals the marshmallows so they stay fresh for much longer than they would otherwise.

You can freeze these BEFORE you attach the eyeballs and black icing. To do so, just place them in an airtight container and freeze for up to 3 months. Thaw on the counter on a paper towel to remove any moisture. You’ll want them to be dry before attaching the eyeballs and decoration.

Variations and Add-ins

  • Candy melts: If you can’t find the the right colors, simply purchase white ones and dye them with some gel food coloring. You should be able find both at your local craft store or Walmart on the baking aisle.
  • Wrap them: Package your little minions up with a little plastic treat bag and ribbon. They make the perfect party favors for a birthday celebration.
  • Add the overalls: If you want to get really creative: place some melted blue candy in a piping bag and use it to pipe pockets or small straps for their little blue overalls.
  • Fruit additions: Attach small pieces of dried fruit or candy fruit slices as accessories, like little bows or fun patterns, to make each Minion pop unique.
  • Personalize them: Use colored icing to write names on the pops for a personalized touch at parties or events. You can even add cute, iconic Minion words like “Bello!” “Underwear!” or “BANANA!”.

Yes, you can use regular chocolate, but I prefer candy melts because they have a smooth consistency and harden well, making them ideal for coating marshmallows.

What can I use if I don’t have black cookie icing?

Edible markers or even melted black candy melts make a great alternative for the goggles and smiles.

What should I do if my candy coating isn’t sticking to the marshmallows?

If it’s not sticking, you’ll want to be sure your marshmallows are at room temperature and dry.
