My classic No Bake Cheesecake Bites have been one of my go-to party desserts for years…they’re easy, delicious, and always the first thing to disappear. Once I realized how easy it was to switch up the flavors, I couldn’t stop! I’ve already done Lemon Cheesecake Bites and Oreo Cheesecake Bites, and since you can never go wrong with strawberries, this one was next on the list.
These Strawberry Cheesecake Bites use the same store-bought phyllo shells with a cool, creamy strawberry cheesecake filling topped with fresh berries. Each one looks like a tiny pastry from a bakery and the best part is that they come together in minutes! Crispy, creamy, and sweet, these little treats give you all the best parts of cheesecake in just two bites!

- Mini phyllo shells: I like to bake them for extra crispiness, but you can defrost them and use them straight from the freezer.*
- Heavy whipping cream: Whips into stiff peaks to make the filling light and fluffy.
- Cream cheese, softened: Full-fat softened cream cheese blends into the smoothest, creamiest filling.
- Fresh strawberries: You will use these as a puree for the filling and as a garnish.
- Granulated sugar: Sweetens the filling just enough without covering up the strawberry flavor.
- Vanilla extract: Rounds out the sweetness and makes the cheesecake filling taste more like the real thing.
- Lemon juice: Brightens up the flavor in the filling.

How To Make Mini Strawberry Cheesecakes
Step 1. In a large bowl, beat the heavy whipping cream with a handheld mixer on medium-high speed until stiff peaks form. Set it aside.
Step 2. Add the strawberries to a food processor and pulse until they turn into a smooth puree.


Step 3. In a separate bowl, beat the softened cream cheese and sugar together, then mix in the strawberry puree, vanilla extract, and lemon juice until smooth.
Step 4. Fold the whipped cream into the cream cheese mixture until fully combined, with no white streaks left.


Step 5. Scoop the filling into a piping bag fitted with your favorite tip, then pipe it into all 40 mini phyllo shells.
Step 6. Top each one with a halved strawberry. Refrigerate until ready to serve.


How to Store Strawberry Cheesecake Bites
Refrigerator: Store leftover bites in an airtight container in the fridge for up to 2 days for the best texture. The phyllo shells soften the longer they sit, so plan to enjoy these within a day or two of making them.
Freezer: Freeze the filled bites without the strawberry garnish in a single layer, then transfer them to a freezer bag or airtight container once solid. Thaw frozen bites in the fridge for 20 to 30 minutes before adding the strawberry garnish and serving.

Variations And Add-ins
- Crusts: If you’d rather have a more traditional mini cheesecake bite, swap the mini phyllo shells for a graham cracker crust pressed into a mini muffin tin with paper liners.
- Sour cream: Stir a spoonful of sour cream into the filling for a slightly tangier, more traditional cheesecake flavor. It will make the filling a little thinner, so keep that in mind.
- Chocolate topping: Drizzle melted white chocolate or dark chocolate over the finished bites for extra sweetness.
- Strawberries: If fresh berries aren’t in season, you can use frozen strawberries instead. Just be sure they’re thawed and drained well.
- Other berries: Feel free to swap the strawberries for raspberries or blueberries. You really can’t go wrong with any of these!

Tips And Tricks
- Dry the berries well: After washing the strawberries, pat them completely dry. Extra water can thin the filling and make it harder to pipe.
- Scrape the mixing bowl: Stop the mixer once or twice and scrape along the bottom and sides to catch any hidden lumps of cream cheese.
- Don’t underblend: A well-blended filling will be thicker and easier to pipe than one that has not been mixed enough.
- Pipe from the center: Hold the tip just inside the phyllo shell and pipe from the center outward. This fills the bottom of the shell without leaving an empty pocket.
- Add the garnish near serving time: Cut strawberries release juice as they sit.

A large open star tip creates a pretty swirled top, while a large round tip gives the filling a smooth finish. Avoid very small tips because pieces of strawberry can block the opening.
A strawberry piece may be caught inside the tip. Remove the tip, clear the opening, and continue piping. Blending the strawberry puree until completely smooth will help prevent this.
Yes. Mash the strawberries thoroughly, then press them through a fine mesh strainer to remove larger pieces. The filling may have a slightly different texture, but it can still work.
