When you’re a busy mom, quick and easy recipes can be a lifesaver. It’s not that I don’t enjoy cooking, because I do. However, these days I’m busier than ever and sometimes I just want a simple recipe that I know my family will love.

Tasteful Selections Bite Size Potatoes

That’s why I’m such a big fan of Tasteful Selections Bite Size Potatoes. Because they’re pre-washed, don’t require peeling and cook faster than regular potatoes, prep takes half the time that it used to. It doesn’t hurt that they taste so good too!

I also like that there are so many varieties to choose from, letting me switch things up with each meal. There are fingerling potatoes and sweet potatoes but my favorites are the delicious bite size potatoes.

Tasteful Selections Ruby Sensation potatoes

With everything that’s going on these days, I’m staying in as much as possible. That means avoiding extra trips to the grocery store and making recipes with what I already have on hand. Since these potatoes are a staple in my pantry, I just needed to pull a few things from my produce drawer and we were good to go.

We’ve always got plenty of peppers (it’s my girls’ favorite vegetable) and I threw in some onion and garlic too. The great part about this recipe is that it works with whatever veggies you have on hand.

Start by cutting everything into bite size pieces. Next, mix everything in a large bowl with garlic, spices and olive oil.

Finally, spread the potatoes and veggies in a single layer on a baking sheet.

Bake for 20 minutes or until potatoes turn a golden brown.

That’s all there is to it…so easy, right? These roasted potatoes and veggies make the perfect side dish too because they go with just about everything.

They taste great with chicken, pork, beef or anything else you like. Sometimes I make a meal out of just the leftovers!

My family loves these so much that they’d be perfectly happy if I made them every night. I know I’ve got a keeper on my hands when my girls are begging to eat their veggies!

Roasted Potatoes And Veggies

These roasted potatoes and veggies make a quick and easy side dish that will have your family begging for seconds!

Equipment

Ingredients
 

  • 24 ounces Tasteful Selections Ruby Sensation (1 bag)
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1 purple onion
  • 1 head of garlic
  • 1/2 tbsp rosemary
  • 1/2 tbsp thyme
  • 1/2 tbsp basil
  • 1 1/2 tbsp olive oil

Instructions

  • Preheat oven to 425.
  • Cut Tasteful Selections potatoes in half and vegetables into bite size pieces.
    24 ounces Tasteful Selections Ruby Sensation, 1 red pepper, 1 yellow pepper, 1 green pepper, 1 purple onion
  • Peel garlic.
    1 head of garlic
  • Mix veggies, potatoes, garlic, rosemary, thyme, basil and olive oil in a large bowl.
    1/2 tbsp rosemary, 1/2 tbsp thyme, 1/2 tbsp basil, 1 1/2 tbsp olive oil
  • Pour potatoes and veggies onto baking sheet and bake for 20 minutes. or until potatoes are a golden brown. Enjoy!

Notes

If you’re in a hurry, you can substitute prepared minced garlic instead of fresh.

One of the best things about this recipe is that you can use whatever veggies you happen to have in your fridge or pantry.  Add asparagus, broccoli, zucchini, brussel sprouts or even carrots (just be sure the carrots are thin or cut into slices so they’ll cook through).

      I plan on packing them up for our road trip camping into the wilderness for cooking on a fire grill when camping. Making Foil packages with the kids so they can use the potatoes in their meal and add veggies to it. So each kid can have their own packaged veggie potato bake. It’s always fun to see their faces when you pull out the bag of Tasteful Selections potatoes. They eat more of them because they are small and fun to eat. Not like huge potato they refuse to eat~
