Strawberry Cake Mix Cookies

I almost always have a box of strawberry cake mix in the pantry, so these cookies happen pretty often at my house. They bake up soft with a bright pink color and a sweet strawberry flavor that makes it impossible to eat just one. I drizzle a simple vanilla glaze on top that settles into the little cracks, giving each cookie that bakery style look.

These strawberry cake mix cookies are honestly some of the best cookies I’ve made, and how easy they are is my favorite part. No rolling, no chilling, and barely any measuring, just a bowl and a few ingredients you probably already have on hand. They’re great for birthdays, after school snacks, or anytime you want something homemade without spending all afternoon baking.

These cookies are great on their own, but a cold glass of milk or a Homemade Strawberry Milkshake on the side never hurts. Kids love them (and grownups do too)!

Ingredients

Ingredients for strawberry cake mix cookie recipe
  • Strawberry cake mix: This is the base of the cookies and provides the strawberry flavor, sweetness, and signature pink color.
  • Vegetable oil: Keeps the cookies soft and tender instead of dry, giving them that soft cake like texture.
  • Large eggs: Eggs bind the dough together and help the cookies bake up thick and chewy.
  • Confectioners’ sugar: Powdered sugar creates a smooth sweet glaze that sets nicely on top of the cookies.
  • Milk: Thins the glaze to the right consistency so it drizzles easily across each cookie.

Variations And Add-ins

Once you’ve made these once, it’s super easy to switch things up. The base recipe is simple, so you can change the flavor or add a little extra next time.

  • Flavors: Swap the strawberry cake mix for chocolate, lemon, vanilla, or funfetti. The same method works every time, so you can easily change up the flavor without adjusting anything else.
  • White chocolate chips: Stir in a handful of white chocolate chips for creamy sweetness that pairs beautifully with strawberry flavor.
  • Cream cheese drizzle: Replace the glaze with a cream cheese frosting drizzle for a richer finish.
  • Strawberry sprinkles: Add pink or red sprinkles before the glaze sets for a festive look.
  • Lemon glaze: Swap a tablespoon of milk for lemon juice in the glaze for a bright citrus twist.
  • Chocolate drizzle: Melt a little chocolate and drizzle it over the cookies for a chocolate covered strawberry vibe.
  • Sandwich cookies: Spread a little vanilla frosting between two cookies to make a fun strawberry cookie sandwich.

Tips And Tricks

A few small tips can make a big difference with these cookies. Since the dough comes together so quickly, it’s really just about getting the texture right and knowing what to look for as they bake.

  • Allow time to cool: Cake mix cookies are soft while warm and firm up as they cool. Let the cookies cool completely before removing them from the parchment paper.
  • Use a scoop: Measuring the dough with a cookie scoop keep the cookies the same size so they bake evenly.
  • Don’t overbake: The edges should just begin to turn golden while the centers stay soft.
  • Give them space: Space the cookies a few inches apart since they will spread slightly while baking.
  • Chill if needed: If the dough feels sticky, chill it for about 15 minutes before scooping.
  • Easy cleanup: Line your baking sheet with parchment paper so the cookies release easily.

FAQs

Can I make the dough ahead of time?

Yes. Cover the dough and refrigerate for up to 24 hours before baking.

Can I freeze the cookie dough?

You can freeze it for about a month. Just scoop the dough into balls, freeze on a tray, then store in a freezer bag until ready to bake.

Why did my cookies spread too much?

Too much oil or very warm dough can cause spreading. Chilling the dough for 10 to 15 minutes usually solves this.

When making the glaze, 4 tablespoons of milk makes thick defined stripes on the cookie while 6 tablespoons thins it out and the glaze blends in a little more. Five tablespoons were used in these photos.
