I almost always have a box of strawberry cake mix in the pantry, so these cookies happen pretty often at my house. They bake up soft with a bright pink color and a sweet strawberry flavor that makes it impossible to eat just one. I drizzle a simple vanilla glaze on top that settles into the little cracks, giving each cookie that bakery style look.
These strawberry cake mix cookies are honestly some of the best cookies I’ve made, and how easy they are is my favorite part. No rolling, no chilling, and barely any measuring, just a bowl and a few ingredients you probably already have on hand. They’re great for birthdays, after school snacks, or anytime you want something homemade without spending all afternoon baking.
These cookies are great on their own, but a cold glass of milk or a Homemade Strawberry Milkshake on the side never hurts. Kids love them (and grownups do too)!

Strawberry Cake Mix Cookie Recipe
Equipment
- parchment paper
Ingredients
- 15.25 ounces strawberry cake mix 1 box
- 1/3 cup vegetable oil
- 2 eggs large
Glaze
- 1 cup confectioners sugar
- 5 tbsp milk
Instructions
- Preheat oven to 350
- Line baking sheet with parchment paper and set aside.
- Use a mixer to combine the strawberry cake mix, vegetable oil and eggs in large mixing bowl.15.25 ounces strawberry cake mix, 1/3 cup vegetable oil, 2 eggs
- Use a cookie scoop to measure the batter and space evenly on cookie sheet.
- Bake 8-10 minutes, until the edges begin to brown and the top of the cookie starts to crack (10 minutes max unless you used a larger scoop).
- Remove from oven and let cool. You’ll want to be sure they’re cool before moving them from the parchment paper, since cake mix cookies are more delicate when warm.
- To prepare glaze, whisk together confectioners sugar and milk,1 cup confectioners sugar, 5 tbsp milk
- Once cookies have cooled, use piping bag or spoon to drizzle glaze over the cookies.
- Allow glaze to set and enjoy!
